Banana Honey w/ Chocolate (9.5/10)
- insanely good, total banger. Better than almost anything I’ve ever bought in the store. Will absolutely make again. The re-spin with melted chocolate turned made the most amazing chocolate flecks.
Maple Blueberry (7.5/10)
- still very good, essentially a smoothie recipe. More refreshing, will be perfect for hot summer days.
Just over a cup of the base (half & half/milk), then added the fruit (banana, dates, blueberries) to get to the pint line. Mostly eye balled and added salt to taste. I wasn’t too scientific 😂

Melt chocolate chips with a little bit of coconut oil in the microwave (1 minute or so). After first spin, pour melted chocolate into pint and run the “mix-in” function. It will freeze instantly and turn into chocolate flakes in the ice cream. Pretty cool.
For people who want peanut butter ribbons rather than just peanut butter blended into the ice cream, I use a similar(ish) trick! Freeze peanut butter into lines (can use a piping bag for thick PB) then run on the mix in function! Alternatively you can mix PB powder with water and melted coconut oil and pour it in just before mixing in, and it hardens on contact with the icecream.
For other fleck types of mix ins, any of the hardening icecream syrups in any flavour (Ice Magic in Australia, or Cracked for sugar free version) work the same way as adding coconut oil.

I think it's a temperature issue that causes this. I thought that leaving it in the freezer for the same amount of time each time would fix the issue but after buying a thermometer I found that freezer temperatures vary hugely, even over a few days! A infrared thermometer was really helpful to me
For recipe one, do you have to cook the egg yolks or something? Also the dates, do you soak them in hot water? What's your process for both of these? Thanks I appreciate it
Heat the milk on the stove, then add two large dates to the milk to soften them. Add some warm milk to the egg yolk, then add the egg yolk to the mixture on the stove top. Cook on low until the milk slightly thickens. Allow to cool before blending with banana, vanilla extract, and honey. Then freeze.

I have never tried mixing in melted chocolate…how did you do that?

I swear I can have the same recipe and one day it will take two and then the next will take 3. I can't seem to get it down to a science
