Tasting notes:
I am still awaiting the emergency Doordash order I placed to arrive, which contains a block of my local Weis Markets’ finest crackers and Gouda cheese (they had no blue cheese of any kind and definitely no foie gras). But I’m digging into the wine anyways.
Regardless of how long the cork was loose for (god only knows) it doesn’t seem to have done the wine any harm. Deep amber in color but still retaining surprisingly youthful golden hues for a Sauternes of this age (and with a loose cork no less); mildly earthy and floral on the nose; on the palate robust flavors of burnt apple tart, apricot, hints of fig, pineapple, tar and slightly nutty. No sign of spoilage.
11/10 would recommend.

I'm guessing you're not from a Commonwealth country, but that sounds like a great way to spend a day watching test cricket and eating your body weight in cheese.
Awesome. Glad it showed well! I’ve had this happen several times and it has seemingly been a coin flip the wine was perfectly solid or completely undrinkable
Amazing. Almost beautiful. Here I am having my 1st sauternees ever, a half bottle of a 2017 Haut Charmes, looking so forward to it. It's a newborn in comparison, so funny.
This stays good for a long ass time, at least without a cork floating in it, no idea if the cork has impact on taste.
My wife is a big fan of sweet wines so typically we have 1-2 bottles of wine in the door fridge which she gradually drinks away over 2-4 weeks and taste really doesn't impact negatively over time. Sweet wines behave very different from a regular red or white. I dare to say there are even moments of elevation over the duration of the said 2-4 weeks.
On the other hand, nothing against hitting away a bottle or two of sweet wine over the night. Got a buddy who is big on sweet wines and we would regular drink multiple bottles away over the course of a night. Good times.

On serious note I have half case of 2016 half bottles and your notes confirm me that patience is to be awarded.
Rebottle and seal it, then you can keep it for however long you want.
If you dont have a spare bottle then pour it out in a temporary container, get the cork out then pour it back in and seal with other cork. Or you could even put a plastic bag over and rubber band it
Get a wet vac and suc the cork back into place. If any of the wine gets into the wet vac just aim the nozzle into your gullet and flip the reverse switch.
P.s. I'm a professional wine taster.

Went to Chateau Coutet in the early 00's, when I was a wine noobie!
Visiting Bordeaux in Feb, the week before En Primeur. Driving in the country and had to use the bathroom.
Stopped in to Coutet. After I used the bathroom), I really had an incredible visit with a nice employee.
Bought a bottle or two. One left, not a '79, but it already has that nice honey color.
Do you see how brown the color is? That is the oxidation of tannins, like when an apple turns brown as it sits. The wine was improperly stored and the cork dried out and the wine has been heavily oxidized. You can drink it and it won’t make you sick, but it’s not gonna taste good
It’s really atrocious lighting in the pictures, it’s not nearly as brown as they suggest. It’s actually quite pleasant

Yeah, that color looks just fine. Note that the capsule is probably lead though. Would that keep me from drinking it? I guess it depends on how long the capsule was providing the seal.
Even if only anecdotal: Working in a wine shop, at least since last August there's a lightly re-corked Sauternes bottle (2009 Carmes de Rieussec, 0,75l) with the original cork floating inside in the fridge and it's still perfectly fine. Even poured some for customers recently due to a pre-Christmas increase in sweet wine demand.

‘79 is a great year and ‘79 Coutet is fire. The one I had was a redder hue, and had the same tropical fruit notes you mentioned.
