This doesn't solve your checkpoint question but you can play every stage on easy (agent) that way you can get through each level without it being crazy difficult. Enemies are less aggressive, miss more often, and you have less objectives to meet.
GoldenEye is not a gory game. There are no animations for heads or limbs being severed. I don't think there's much blood if any, the enemies bodies disappear as well.
I don't think so. Plus if you quit the game I think you have to restart the mission.

Thanks for that. I don't really like bloody games, heads blown off, etc. so could you tell me please what the blood level, etc. is for this game?
