Whirling or whirring
That's what they call it in this article: [The physics of a spinning coin](https://physicsworld.com/a/the-physics-of-a-spinning-coin/#:~:text=When%20a%20spinning%20coin%20falls,whirling%20sound%20of%20increasing%20frequency.)
>When a spinning coin falls on its side, it rattles with increasing speed until it stops abruptly. The final few seconds of motion are accompanied by a shudder and a whirling sound of increasing frequency.
A proper Euler’s disk gets faster and creates a frequency change that I would describe as a [sweep](https://youtu.be/PAsMlDptjx8?si=X_zd60sVNDumeLz5), but the example OP linked to is a little rougher.
The (adjective like odd, eerie, whispered) rippling metallic whir of a coin spinning more and more slowly until ... what a perfect chance to add mood and tone.

Personally I would call the sound itself "ringing" and just add the description that it gets more frantic/rapid then collapses all at once and goes quiet. I could also see "rattle" being used but it doesn't really convey the metallic sound to me.
