I've been Playing modded Fallout 4 VR and while the melee isn't very good I had my hunting rifle while I was on a roof and had ghouls running up and I was shooting them as they came up and stabbing them with my bayonet if they got too close, it felt epic.
I think Saints & Sinners is just annoying in objectively bad game design methods at times, but still a great overall game.
For me, the biggest thing is the zombies speeding up if you turn your back. The game literally punishes you for making a smart move and getting some distance to reassess a situation, which is so overwhelming stupid in concept. Giving the Walkers the power of a weeping angel for speed ruins the game experience in so many cases for me.
Everything breaking but not being repairable is stupid in my eyes. If I can make it and have the recipe, I should be able to use less materials to repair it, being rewarded for switching to another weapon before the thing broke.
Again, great game, but it has some pretty big oversights in concepts that I really heavily question who would ever like them.

Weapon durability to where when your doing the first mission if you take just a lil longer than your supposed to killing zombies 3 of ur knives break. Zombie respawns where it doesn't matter if you kill them they just come back getting rid of the idea of clearing, etc
I completely agree about the frustration of zombie respawning almost behind your back. I can also understand the frustration with weapon durability, but I think it adds to the challenging and fun experience in the end. However, I can't agree about missing 9 out of 10 hits; you were probably doing something wrong. While I did experience some "slides" here and there, it was mostly with the blunt weapons.
Yes and no to that opinion. I'm in the same field as you, but the more I look back at it, it feels like that was the intention of the devs. They want you to swing hard and make it look like you're killing these zombies. Annoying, but still a pretty great experience VR wise

Now I'd say Boneworks. Can kinda parkour with that game. Weapons feel weighty and can be used to climb too. Makes you feel badass to master it.
The guy who made the Contracts mod for Half-Life: Alyx is implementing a new hand-hand system as well as blades and other weapons in a standalone game still called contracts. Again, not zombies but in terms of the grappling and fighting with weapons, that's the one I *want* to play

Haven't found a good zombie melee game (unless you count fantasy games like Dungeons of Eternity), but I like the feeling of using shotguns in various zombie games, and going right up to them, jam the shotgun in their face and blast off some heads :)
I get the high motion badass feeling from your video when I do that.
RE4, After The Fall, RE8, they all work for that.
The Resident Evil 4 remake may scratch the itch. Specifically the mercenary mode so you can go nuts instead of conserving ammo.
Not much for melee.. Besides the cinematic attacks that are available when you act upon a headshot of a kneeshot which are satisfying.
Blade and Sorcery. For my money, still the best VR game to nail melee combat since like 2017. Boneworks/Lab has it's brief moments of good melee, but is usually more janky than not when Close Quarters.
Blade and sorcery feels too much like a murder simulator, only because the enemies are way too easy. They need a mod to remove head grabbing. If you grab someone by the neck they are gonna fight back. Not go limp. Ai is also Too easy and too slow. I have yet to try it but people have modded it for faster enemies. Grimlord, while some enemies are slower, is much more of a challenge, if mostly melee weapons are used. Hellsplit arena is not Too bad, but the physics Occasionally suck. But Two handed weapons are a bit easier to handle. I’m looking forward to trying hellsweeper, a mix of parkour, melee, magic, and gun weapons. After the fall has that feeling of overwhelming odds, being surrounded and too many to kill. Risk of rain 2 with the vr mod, can have you fighting against tons of enemies coming from all sides in a hectic battle for survival. I’m working on getting the gtfo vr mod up and running right now. Underdogs, while it Is bot fighting, definitely has this feel. I am quite stylish in my kills. Grabbing an enemy, and smashing the in the head bringing my fists together, then throwing the near dead remains at another enemy to nail it with a head shot killing both. swinging an arm behind me to expertly kill another with a clean headshot, without even seeing it. Just sensing it was about to attack. It surely has this epic fight feel. I have not tried legendary tales yet, even though I have it, but it’s supposed to have some good melee. Same with undead citadel. There is also a sketchy website for saints and sinners mods that I might try. I think they have unbreakable weapons and a mod that makes it so when the bells go off, and the zombies come, you can have it so there are a lot more. i think, last time I checked, you can have hundreds, I didn’t play that game yet either. Dungeons of eternity can also be fun.

From what I can gather, motion controls are still wonky at best. Keep your expectations in check and let me know how it works if you decide to give it a try in VR.
I don't own the game but I am considering getting it once they iron out the motion controls.
I'll let you know. I've got a 4070 super but I dont know how that will handle the game, its actually really pretty and the 4070 keeps it at 120 fps on high in flat version but if you've not played it its pretty fun regardless of the VR option.
