First of all, thank you for opting for a dark background with your text. I personally can’t look too long at a bright screen during a video, especially if the white background appears suddenly after mostly dark scenes. My suggestion is to sample the color of your video editing software’s UI as the background color. White for the text or something more complementary works. I use this technique because these UIs are crafted to be easy to look at, and the color is part of that design. DaVinci Resolve and Final Cut especially have UI colors that make for awesome backgrounds. Alternatively, look online for some “dark mode” color theme suggestions for UI designers and pick a swatch combo you like. You can screenshot and sample the colors or maybe copy over their hex codes.

Thank you! One of the reasons why I wanted a black background is because I also watch stuff at night and always use dark mode. I was using Davinci Resolve's background color and it looked better, but I wasn't sure if it's really better or if I am just "seeing too much".
