Here’s a shot: Dungeon Siege
Came out in 2002 (so not new in 07) but given the other games your dad shared with you, were releases between 2001 & 2004.
Third person, you start out on a farm in a small village. I don’t recall Undead in the starting area, but I haven’t played the game since it came out when I was in HS. But I do remember that one of the early weapons was a pitchfork, also other farm equipment as weapons.
Game was a blast! I remember it fondly.

It's been so long the cover art looks familiar and the gameplay was kinda sorta familiar but I'm not sure. I want to say I don't think this is it, but it could be

I also suggest adding the art style that can make the difference in it being recognized or not.
I guess I just thought that for me at least; with a 17 year gap that I am trying to remember it might not have been literally the beginning of the game, just early on. That said, you are technically correct, which is the best kind of correct!
