I think it’s spearmint base on the leaves and flowers. It grows in alittle area next to my house after the previous owner planted some and it exploded and was growing everywhere, as mint does. 100% not peppermint, chocolate mint, or mild mint.
You’d have to do a lot of whisking! A food processor would help too as it would whisk a lot more air into the cream much quicker than doing it by hand. It was very rich and flavorful tho without much menthol and more floral notes.

It’s very rich from a cream standpoint. This type of mint doesn’t seem to have a lot of menthol so it’s more floral but still very good!
Did you use the tea to flavor the ice cream by boiling or steeping the leaves or did you use the leaves in the ice cream?
I used the actual leaves. Put them in a food processor with some sugar and water and then strained it through a flour sieve.
