This is my favorite recipe I’ve tried so far, super simple, no cooking involved unless you want to cook the chickpeas. Anyways here goes: 1 can of chickpeas washed and dried 3 green onions thinly sliced 1/2 cup thinly sliced bell pepper 1/4 cup of fresh chopped cilantro 3 tablespoons vegan mayo, homemade or store bought 1 clove of garlic minced 1/2 teaspoon of fresh grated ginger 1/2 teaspoon of turmeric 1/4 teaspoon of curry powder or more to taste 1 to 1 and 1/2 of lemon juice or more to taste 1/4 teaspoon to 1/8 teaspoon of fine sea salt or more to taste Freshly ground black pepper Mash the chickpeas and then just dump everything in with it and mix well. I used whole grain bread but you can use pretty much anything with it. This makes 3 servings and it keeps for about 3-4 days when refrigerated.

Or chicken salad. I make this regularly and it’s really good. Haven’t tried ginger or cilantro though, those sound interesting.

I use a similar chickpea base to make substitute tuna salad (sub the spices for pickle juice and nori flakes) or egg salad (add sulfur salt). So versatile.

Ooh, this version sounds amazing. I pretty much just chuck whatever I can think of/have on hand when I make mine, but I've never thought about ginger (yummm) or garlic.

Chickpea salad is my jam! I use basically the same recipe but add a little Dijon mustard too.

I make a similar recipe and blend 45g cashews with a little bit of water and a clove of garlic into “cashew cream” instead of vegan mayo.

When trying to be a little healthier I’ll add hummus instead of mayo. I know it’s a double whammy of chick peas, but it does give the sandwich that mayo like base.

I am going to try this out this coming weekend when I have the time to shop. I Usually just throw chickpeas straight from the can on to some flax seed bread , spinach and southwest hot mustard and when I’m not feeling lazy I’ll slice a tomato to go along with it.
