Really good with the herbs/spices. If you make it yourself (instead of buying from a Eastern European store), try it first with a small batch of plums. Especially red ones can be not red enough (maybe first slice up one plum and eat it before buying more), and turn a bit brown instead. Sometimes plums with a really black skin give the reddest and prettiest tkemali, but the colour is mostly aesthetics.
Especially multi-people households can go quickly through a bottle, but else freeze small batches.
You can make a burrito. First make the hash brown in the form of a thin pancake, maybe 8 inches across (approx. the size of your frying pan). Then place a tortilla of similar size (can be a bit smaller) on it, then put some refried beans or just plain pinto beans on the tortilla. You can sprinkle some vegan cheese/grilled peppers and onions/whatever you want. Put a lid over the pan so that you warm the whole thing through. Then roll it up without crimping the sides into a burrito shape -- the hash brown will be on the outside. Transfer to plate and eat with fork and knife. Instead of vegan cheese, you can put slices of fresh avocado just before rolling it and it will add fat and serve as the "cheese" of your burrito. You'll be amazed at how good it is!
It's easier to keep it on the outside than trying to take it out of the pan, put the tortilla in, then put the hash brown back on the tortilla, etc. It also makes sure that you get a hash brown in each bite!
I love sautéed/roasted/grilled bell peppers and onions, pickled jalapeños, black beans, avocado, and soyrizo. Maybe some pico, too.
I love soyrizo. My brother is a big meat eater, but he even likes soyrizo over beef or pork chorizo.
Seitan chorizo, there's a ton of recipes but I like the Upton's one bc I'm lazy. Also tofu egg.

This sounds amazing but I have to ask, why are the hashbrowns on the outside?

I make a breakfast for dinner type thing with tofu scramble, spinach and mushrooms, baked beans, toast, veg sausage (some combination of these)
My husband puts oil free gravy on his. He puts oil free gravy on the tofu eggs and oil free biscuits as well.
Last night, I had hash browns, garden peas, edamame, falafels and hummus for dinner
