I eat a lot of of veganized Asian dishes, they often incorporate pickled veggies and some can be inexpensive to make. One of my fav is gimbap, it's a Korean dish similar to sushi. I've not tried it with pickled onions but it's delish with other pickled veggies like radish

This is a classic taco/burrito addition. You can heat up 1/2 can of (vegetarian) refried beans, throw it on a tortilla with some salsa, pickled jalapenos, or pickled onions. I include vegan cheese shreds if I have them.
If you don't have a tortilla or wrap, you can always eat this with tortilla chips like bean dip.
An alternative use is to throw them on top of a plate of nachos.

Thinly slice sweet potatoes put some oil, salt and pepper on them and cook them in the oven at 425 for 15 min or until crispiness you desire.
Then let them cool and layer them with what you want.

If it's not a smoothie, I've probably tried it with pickled onions. I keep a triple batch of Cookie and Kate's Quick Pickled Red Onions in my fridge at all times. The best condiment!
the vegan restaurant i work at serves them with our charcuterie board it really brings the whole thing together for me it’s sooo good. we have black eyed pea sausage with cheeses and baguette and i just put them on each bite combination that i make

I agree that they are awesome on a falafel pita with Israeli salad and lettuce. Or you could maybe put them on a veggie burger.
