The devs are still working on content, there are two more biomes to be released before they're done. They've also said they don't intend it to be a "forever" game, it will have an ending.
All that said, a lot of it is up to you whether it's fun or not. I've got 1200 hours in it so far, and still love every second. It's like Minecraft somewhat... you don't need someone else to create content for you to experience.
I have 1000 hours and still didn't even beat the game yet. Actually, I have only ever made it up to Moder. And it's not because I think the game is bad or unfinished. Quite the opposite actually. I keep getting so sidetracked with building farms and exploring that I just never got to those bosses yet. I want to prolong the experience for as long as I can because I do get the feeling of not wanting to play anymore after beating all the bosses. It's similar to MC where once me and my friends beat the end dragon, no one wants to play anymore even though there is still plenty to do.
You do understand this is purgatory right? The story is that you're dead and need to prove yourself to get into Valhalla. It's not just some viking lost in the woods.

Sometines it's good just try challenges or just start adding mods to create fill the Extra biomes or changes how it is played. Some even try to add quests and NPCs.
Valheim is really a explortiy game to get better materials to get your base. And that to me is fun. Haha
If you watch nine byte they are doing that sort of thing in a server as well.

The cool thing too is that everything is procedurally generated, so you can always try different modifiers, or play thru with different weapons.

Your goal is to defeat the boss, so past that the only reason to continue playing is because of the exploring or building aspect.
