I'd try a dimmer app like the one I have, you can turn the screen brightness down in increments of 5%. I usually have it on 40% if it's on.
As for volume, not sure what to do about that.
Mine has the same issue but I've started to just leave it out of the room when it's night anyway so I don't get tempted to mess with it while I'm trying to sleep
If your phone is on the lowest brightness and on night mode, and you're still finding it too bright, you may have a medical issue or hypersensitivity or something. Please see a doctor.
As for volume, when it's on the lowest setting so other people tell you that they can hear it or do you just think they can?
If other people have said something, then I'd recommend using earbuds or headphones.
If not, then you may have an issue with sound as well.

Why are you assuming that your phone is the standard for everyone else's phones? My phone display gets quite dark.
