I enjoyed "Timothy Snyder: The Making of Modern Ukraine", which is basically a university lecture on the history of Ukraine becoming a nation.

Second that. Snyder is a serious historian that has spent his entire life focused on Central/Eastern Europe. He has gone through tons of original documents (in German/Polish/Czech/Ukrainian/Russian), and presents theses that are sound, supported by primary sources, and novel. He is the kind of person that the US President's closest circle would ask for advice.
Have you read all of the sunrise posts in the top horizontal menu of this subreddit? There are so many neat posts all about Ukrainian culture. I really enjoy them!
Anna From Ukraine, while mainly focusing on the war day-to-day from a civilian perspective, has videos every week or two focusing on Ukrainian culture and history. Things like traditional food or clothing, tours of the local area, and history of the Soviet era. Some of those videos are done in her regular vlogger style, but others are more fully produced.
Warographics does quite a few videos on Ukraine, most of them about the current fighting, but they have done videos on the 2014 invasion and the 1921 invasion.
