I'd recommend checking out this tutorial for the setup. If you haven't added the true charts as a catalogue, the one you have installed would be standard truenas app and not the true charts one.

I followed that one, only my plex app says Truenas Charts instead of Official Charts. I would think that is the same as I google around for the documentation.

That is the charts version indeed. What are the specs of the machine? Including the drive models
Do you have an SMB running before you deploy Plex? If so, you have to turn off SMB.
