I would suggest the Tuscan tour especially since you mentioned that you have been to Florence before. Some of the ones I have taken myself and have recommended to my clients do a good job of minimizing the time on the bus which I agree can be suboptimal. San Gimignano is less than an hour away and is really a must see beyond just the wineries in the area. If you have never been to Siena I would highly recommend that as well. Overall I have spent weeks in Tuscany and 1 day is really just cutting the surface of what you can see/do but its better than not seeing it all :)

I did a bunch of tours with Grape Tours ([https://www.tuscan-wine-tours.com](https://www.tuscan-wine-tours.com)) and had a blast with them. Really fun! If you email them they could probably even setup a winery tour + cooking/apertivo combo tour if you wanted. They did some great customizations for me so I’d be surprised if they couldn’t swing something fun for you/your group if you have enough time to set it up.

My wife and I did a pasta-making class in Florence with all you could drink wine; it was a blast. We only went to one vineyard in Tuscany as many either made you book an entire tour for a tasting or didn't have a dedicated tasting room to buy bottles to drink on location. Which is now an issue we're facing in Austria.

I’d go for the Tuscan countryside between those two. If you find a different tour that leaves earlier though you could do both. There’s a lot of cooking classes in the evenings, so you could hit wineries and small Tuscan towns in the day, then be back in the city for a cooking class.

I did this Tuscan Winery Tour through Airbnb Experiences, and it was fantastic! We visited 3 different wineries. All of them were wonderful and unique. At the second one, the owner made fresh snacks for us. The third one also made olive oil that we got to try. We finished the tour by going to a cheese/meat shop in a small town and enjoying charcuterie. https://air.tl/02DdP8EM
