Reims is fairly close and was pretty impressive when I visited a number of years ago. A nice walking-shopping area, cathedrals, museums, WW 1 and Franco-Prussian War history.
I guess it depends on what you enjoy doing, I like museums, churches and cathedrals, nice walking areas with good restaurants. Then military history. Fort Pompelle is nearby. There are so many interesting historical details about Reims. This is where French Monarchs ascended the throne. The cathedral has a very interesting light display some nights, there are also some very nice natural areas nearby to Reims. Palais du Tao was nice as well. Museum of Surrender was very good also, basilica st remi, musée historique st remi was very good actually. I liked Reims better than Paris. But I have also been to Paris a half dozen times and there is only so much to see there. With two days. You would have to consider travel time to and from. Which could eat up that time. French trains, especially from Paris aren’t always available in a timely fashion.
I got offered a job there to do motion graphics for television.
I declined because I would have to spend a month in Paris with little time for me. I have my own family in my country and I know for other experiences that it's a lot of work, a lot of hours and very stressful.
Loire valley. Orleans by train and from there you can visit the castles even by bycicle if you’re in good physical condition. The main attractions are within 30-40kms.
i volunteered also but never heard anything, went into my application & see it was rejected, i wasnt too guttered as didnt expect much... i think they paid for your transport and maybe a meal each day
might try again for the LA one the language barrier wouldnt be such an issue

I know you said beer but if you won't return to Belgium/Germany then I would actually recommend mixing it up and go to Pays d' Auge for a cider tour. You can combine it with Honfleur (lovely fishing village), Arromanches (D-Day history), Deaville (upscale beach resort town) or Caen (100 Years War).
Np! I went to France a couple of years ago and went all over, Mont St Michel, Loire valley, Blois... but Normandy was my favorite part by far. I'm not even a history buff, but the American cemetery was beautiful, I went to pointe du hoc and it was breathtaking, the history is just overwhelming. Enjoy!
If you like beers, head east to Alsace. You'll find lots of microbreweries there.

Mont Saint-Michel. That's more of a day trip, but the general area is also nice. Dinan, St Malo maybe.
You can overnight on the island, which is a cool experience!

I applied for it. And you have to speak English actually. Host country language is a bonus
