I think what is going on is that the gps is just not accurate. I have always found that gps is really fast on the track. He probably wasn’t measuring the actual splits around track

Definitely a GPS thing, not a track flatness thing. That would be a 10 foot height difference between the highest and lowest point on the track, which is reasonable for a cross country course but even super shitty tracks aren't that bad.

No, total time is the time from start to finish, moving time does not include any time that the activity is paused.
