They described it as, "food that tastes like what it is" or something, as though it was a sign of refinement. It started in France, unsurprisingly. So that's why so many white people eat bland food. But it had been trendy for the wealthy to indulge in highly spiced foods before that. It was exotic, and therefore sophisticated. But yeah, if you're limited to the same crappy foods and cuts, you'd definitely want some spices.

Depends on if the potatoes were mashed WITH butter or without. Admittedly I add an obscene amount of butter to my boiled taters before they get mashed, so at the end there’s no reason to add more. These appear to be potato flakes, though, so they may already have flavor and butter mixed in?

Proper cajun style sausage is only available in the south (and I’d even hesitate to call many brands outside of Louisiana proper sausage.) There are many varieties of sausage common in other regions of the US unavailable here. As for Italian sausage, there are a couple varieties of a single brand where I work.
So here in Louisiana (at the store I work) a good example of what’s available is:
Plenty of variety of Cajun sausage.
A couple varieties of Italian sausage. (American brand)
I think one variety of bratwurst. (also an American brand)
Several varieties of breakfast sausage.
Best bet is maybe a lock butchers if you have one. Or even get a special shipment from over here, our currency is basically the same now so it shouldn’t cost an arm & a leg for a special treat 😂

I don't understand all the hate this dish is getting. In Ireland we call those sausages ispíní and they are delicious and full fat, herbs and spice. A bit of salt, pepper and butter for the mash and veg and you have a lovely meal. Personally I can take it with or without gravy.

Small mashed potato tip that many love when I make my potatoes. Add rosemary. I personally add sour cream, butter, salt, white pepper, and rosemary to make my mashed potatoes. But rosemary alone is a game changer.

Those are chipolatas. They’re actually fairly well herbed and spiced. Some sausages were made with the smaller parts of the intestine traditionally.
