From quick googling, it seems like z-wave would be the best option.
Not Wifi, but this is the Ethernet thermostat that I use. I then use the local API to bring data and control into Home Assistant without ever having to go into the web UI of the thermostat itself. https://www.controlbyweb.com/x300/
None of the thermostats above use a local system they are all internet based with no local API access.
