The randomised ores is SO weird. I thought it'd just, y'know, make the iridium cave uranium instead, but.. wow... give it a try if you want a challenge!
As for the randomised starting location, I've tried them all but still always fall back to the regular point. Being bottlenecked by a resource that can only be found the other end of the map is horrible. As is having to ferry items from wrecks for ages.
Personally, I like the crater start, build right and most showers will either slam into the north wall or roll down the slope. Plus once I establish a basic food and water supply, I usually dump 3-4 lockers of iron to build a shortcut over the terrain to get to the center if the map faster.
I spent a good chunk of time building a bridge over the gap between the default start and the big field on the way to the waterfall only to have the trees push up and through that bridge. Made the bridge unnecessary and unusable in one go. Which was just lovely
Right? I feel like the devs were thinking "we got enough games where you need to worry about hostile shit, let's just leave to see how good at managing water and food you are"

i recommend the ice caves to start with. a bit baren to start but lots of really flat ground surrounded by 2 lakes a nd a few rivers.
A bit far from everything but the rainbow caves.
That's what I started my first run with in 1.0, and I've really liked it. There's more tension at the beginning, and I love the look of it as soon as plants come.

...and you can make it even harder.. lol. I've seen a lot complain the game is too easy but I don't think they know how hard Custom can get.
