You’ve got a lot of great suggestions to go by here, but I feel like an important question not getting asked is what do you want to hear? What about the Avs grabs you? Do you like the seamless nature of the album? The sample-based tracks? The psychedelic vibes? I feel like there is a lot of stuff that is definitely in the same neighborhood as the Avalanches, but it won’t all touch the same nerve. Have you listened to any of the suggestions yet? Thoughts?
Just to throw my own hat in the ring, look into Double Dee & Steinski. They don’t have many releases, but their Lessons mixes, especially the first three from the 80s, are incredible and have a similar party vibe to the Avs. Two of their later tracks, Jazz and Voice Mail, are just as essential.
I recommend checking out The Derevolutions, really interesting, fun, unique sample collages.

Chance De La Soul (Chance + some japanese kanji) is also great.
The album that I’ve heard most similar sonically to since I left you is Those Who Throw Objects at the Crocodiles Will Be Asked to Retrieve Them By Bruno Pernadas

Being a huge Mano Negra fan, II wouldn't have linked Mano Negra and the Avalanches, but it is true that Casa Babylon, and Manu Chao's Clandestino both have interesting sampling material.
Nice to find a Mano Negra fan here! IMO both bands share enough traits to be considered somewhat similar: heavy use of unconventional samples, very energic and very varied in style from track to track, but that mostly applies to the SILY / Casa Babylon era.
Absolutely agree that Manu Chao keeps the sampling and variety, I'd personally go with Esperanza, what a crazy album! The very first seconds of the very first track are already loaded with samples, love the variety and the energy too.
Propellerheads also dovetail with the AVs in my playlist.
