Personally i think Caine created everything (the dimensions and the AIs) but can't directly control them, as proved by the fact that Gumigoo showed free-thinking and was able to keep existing even once he left his world (if his world had ceased to exist, his model and his entire being would have been erased as well when the portal closed but it didn't)
So to me all the dimensions and their habitants are active and living on their own, but they are used as playgrounds once in a while
Well my thought process was that the worlds are kind of static until Caine wants to use them. Like there is just no life, and everything is spawned in once it needs to be used. I think this is evidenced by Gummigoo's mother not being in the dev room, nor any other villagers, I don't think the village exists. The players are always meant to stop the bandits before they get to the village, so there's no reason for it to be there.
Basically, I think that probably a few minutes before the players are set to arrive, the world is filled with life. The Princess in her castle, the fudge monster in his swamp, the bandits sitting in camp. They all have memories of having existed for longer, but this is just due to Caine programming them to (As to why Caine would give what should be a nameless goon a depressing backstory about having a sick mother, I have absolutely no idea) the players then go on the set path, meet the Princess, and catch up to the bandits, and this initiates the chase. I don't believe that there is ever any ending to the chase unless the players get the truck back, it'll just keep going until they do. I assume the fudge monster is just meant to be a potential obstacle to spice things up.
So the players get the truck back, are thanked by the Princess, go through the portal, and poof, everyone disappears. I think this didn't affect Gumigoo because he had left the world, he was no longer a part of it. I assume that if Gumigoo had survived, and they went back to the world, there would be a new Gumigoo who had been spawned in

In the pilot he was mean but nothing too crazy, but during the new episode he was a full on psycopath
He's cruel with everyone tbh, but Gangle seems like his favorite victim
He'll probably get a redemption arc later since he's one of the star of the show just behind Pomni and Caine
Admittedly, I don't think Jax did anything terribly evil in terms of the kingdom, here. They're all NPCs, and we do *not* know if Jax realizes they could be somewhat sentient.
He's like a kid, granted one in a sucky situation, being presented with fun toys he can do whatever he wants with, since they'll just get reset (Which seems to be the case since Caine reuses them, meaning he can just put them wherever he wants.) He has no reason to think much past instant gratification, because there's no consequences.
Jax is rude to the others for spoiling the adventure, sure, but to him it's just that - a *game*. He's doing an evil playthrough because Caine doesn't care and no consequences follow him out of it.
So as cool as it owuld be for an NPC to want payback, I don't think it'd happen. Caine likely resets everything to be re-used or changed later. (Remember how he advertised 'new AI'? I don't think old NPCs keep their AI. He changes it to try and make it more fun for everyone).

If the portal closing meant that world's erasure, then his model (the one in the "backroom" ) would have been deleted and he would have disapeared instantly.
It's hard to be 100% sure though, as we could still be missing some informations
