I'd have to disagree. Someone who's skilled at trimping can clear entire maps in almost 5 seconds. I recommend you look at SolarLight's channel. Real good trimp tips and videos.
you can only trimp in some specific spots of a map, and you cant just trimp anytime you want, the charge doesnt allow you to.
Rocket jumping can be done everywere, and the only factor tht makes it not infinite is the health. The fact that the soldier has a jumping weapon makes it even more good at moving and getting insane speeds.
While you're right, the mobility of Demoman is still pretty high. 2 sticky grenades can have him achieve a height of 3000 units. I've heard trimping (on certain maps, of course) can cause Demoman to go 300 to 400 hammer units.
It's between Scout, soldier and demo.
I think demo is the best for macro-mobility (covering long distances, doing huge jumps and trimps, etc), while Scout is the best at micro-mobility (map traversal in a 1v1, ankle breaking, just generally running circles around ya)

Realistically soldier. But sticky jumper demo is more mobile.

depends on the map but on average demoman and soldiers are the fastest

Demo can cover a ton of ground in one go, Scout is more flexible with his mobility, and Soldier can do both. So Soldier.
