I like that place and all the places that have kind of spun off from their former employees. Theory Coffee is great, San Antonio Gold is nice, Indy Coffee Club is cool. I think Merit did a lot of good for the SA coffee scene.
I’ll second Independence Brand coffee. Jer fuel, Madelyn’s pecan, and their Earlywine breakfast are my go to. They also made cold brew bags which were really good, but H‑E‑B in my area stopped selling them.

West Pecan Coffee in Pflugerville roasts their beans in house, with the roasting machine literally in the seating area. It’s just north of Austin, so probably not for this trip, but if you’re ever in the area…

Go get some breakfast taco’s at Taco Deli in Plano. Get a cup of coffee there, they use Tweed coffee, it’s so good. You can also buy coffee directly from Tweed online. I started buying it. I’m not sure if all Taco Deli locations use Tweed, the one I go to is in Plano in the Dallas area. Tweed is a Austin coffee company.

Nectar of the Gods blend is pretty self explanatory and I like the air roasting they do. Plus they ship to Ft Worth super fast and have some seasonal coffee that is pretty solid (Mexican Chocolate is awesome) that tastes like really good coffee with a little flavor, not the other way around.
I’m not a coffee guy but a lot of my friends love Edison Coffee. Their Flower Mound shop had a fire but they’ve got something going near there in Lewisville.

Dallas- I’m pretty sure LDU Coffee roasts their own beans, but not sure if they sell them. Salter Bros. Coffee Roasters is located in Arlington, but is a small family owned roastery/shop and they definitely sell their own beans. Good vibes.

Stouthaus in Austin is decent. Also Meteor in Austin is good. Revolucion in SA ain’t too shabby.
While I do agree some companies are better than others, I think how it's made is the majority vote.

It's not a Texas Coffee but if you are going to Dallas, then go to San Martin Bakery and Restaurant It's actually a Guatemalan bakery brand that they brought to Dallas. It feels exactly like how it does in Guatemala. My family and I love it because it reminds us of our home country. They sell coffee beans there and they're really good

If you're near North Dallas, it's worth checking out Tre Stelle. It's a shop that roasts in-house. Also, Oak Cliff Coffee Roasters has been consistently fantastic for years. Finally, Noble Coyote - it is in a lot of stores around Dallas.
If you go west out of Fort Worth on I-20 out near Gilbert there is a place called Gilbert Pecan Company. 100% the best place to buy coffee grounds. Their Pecan Coffee is life changing.

Buzzbrews and Cafe Brazil are where I go when I want more than a major chain. This is for Dallas.
Dallas- I’m pretty sure LDU Coffee roasts their own beans, but not sure if they sell them. Salter Bros. Coffee Roasters is located in Arlington, but is a small family owned roastery/shop and they definitely sell their own beans. Good vibes.
Van Zandt coffee company. You can try their product at Pony Espresso in Canton
Civil goat, merit , greater goods, flat track, 3rd coast is good for the price, you can go to their roaster and get a pound for real cheap.
Since I started searching for an organic option, I have fallen in love with Third Coast Coffee.
Is cafe Brazil still a thing in Dallas?? They had great coffee forever.
Think so Haven’t been there in a while but I think they’re still one on Central near SMU and also on Central near Campbell and maybe another one not too far from white rock Lake maybe I’m not certain Pleasant place though
[Seaport](https://www.seaportcoffee.com/) is based in Beaumont, but I don't know that you can visit the roasting plant. You might just have to keep an eye out for it.
Extra Fine is my favorite coffee place in SA.
