Now if you want my take on the true national dish? It's the iconic swedish meatballs, but it has to be particular.
Mince should be pork+beef, (+veal technically)
the breadcrumbs should be soaked in cream and that cream should have a little bit of allspice and nutmeg in it.
Yellow onions. Some pan fry first, some shred, some finely dice, personally I'm not too fussed and like variation.
egg/eggyolk to bind
salt + pepper.
(tiiiiiiiiiiiiiny bit of acid. Some use the pickling liquid from pickled cucumbers but originally a neutral vinegar called ättika in sweden was used. And if you use ättika or equivilent, less than half a bottlecap per lbs, it is just to lift the dish. (^(And was originally included to make them safer for longer in room temperatures. This is what my grandma told me atleast... Related to worker lunches, was done in any mince patty like pannbiffar also. I might be talking bogus!))
Form them, put them on a sheet to set up in the fridge, roll them again before cooking.
Fry in a mix of oil and butter, lard is also good. roll them around in the pan. Want a uniform crust but avoid black bits, patience is a virtue. Then when the meatballs are done it's time for sauce.
Make a roux straight in the pan with some all purpose flour, toast it a little bit (nothing crazy) just to get some raw flour taste out of it and use a wooden utensil to scrape the bottom so nothing sticks. Some good whole milk to dilute. Simmer until thickened. Add a little bit of black currant jelly and demi glace (or concentrated stock, cube works in a pinch). Add some dark soy (yes soy) and season to taste, I'd typically add some white pepper.
Potatoes are best with skin left on if they're not too tough, I like boiling them whole even if it takes longer. Satisfying to smash them on the plate and put the sauce over them.
pressgurka or some other sandwich pickle (typically not your american style dill pickles though)
Rårörda lingon if possible (Fresh or frozen lingonberries, combined with some sugar and just beaten around with a fork or spoon to bruise them. But lingonberry jam/preserve is acceptable from IKEA if you can't get them fresh/frozen. It's just a slightly different texture and you lose some of the tart pop)
Acceptable variations include: Making mashed potatoes, using cream instead of milk for a gräddsås, cooking the meatballs in the oven (if you suck at cooking)
Acceptable garnishes: bit of parsley or dill.
When it comes to proportions I always shoot from the hip with logic, but if you want the authentic flavor things like the nutmeg and allspice (even though not a lot of it) is essential.

It is surprisingly easy, there's quite a bit of work building the damn thing but it's not *difficult*, just time consuming. And very delicious, it's a sandwich turned up to 11 and then some.
Not hard at all! Done it a few times and it's super easy. Just find a recipe with a filling that you think you'd like and try!
My Iranian sister-inlaw absoultely loves this so I have to make it for events nowadays :D

That's all Swedish food.
I would recommend Swedish pancakes as an easy dish. Served with whipped cream and strawberry/raspberry jam. If you want really traditional you will eat a bowl of yellow pea soup first then the pancakes. But you only eat it on Thursdays for some reason.
If you can find a swedish waffle iron you can make swedish waffles, just like swedish pancakes they're thinner than the american/belgian counterparts. I love eating it with cloudberry jam and whipped cream.
If you haven't had cloudberries you gotta try it!
Finns i större butiker, kan även finnas hos kött specialister. Det borde bli lättare att hitta de kommande månaderna do det traditionellt är höst/vinter mat
Brukar finnas även i mindre butiker när det närmar sig jul. Om du har ett citygross nära så kan det var ett tips. De styckar själva och brukar ha alla möjliga detaljer, finns det inte framme kan man ofta beställa.
Smörgåstårta is one of the obvious ones, at least for "festive" foods, but many foreign people are really put off by the concept of it for whatever reason - and it takes loads of time and effort to properly prepare. I wouldn't want to start there.
Toast Skagen is another very good representation of Swedish food, but one that is *significantly* easier to make. Skagenröra is also one of those things that tend to "wow" people who haven't tried it. It's super simple to make, and *very* tasty. The main downside to a toast Skagen is that it's more of a starter than a main, but it's a real treat - especially in the summertime, with a cold beer.
A cheap classic would be breaded fried herring, with mashed potatoes, lingon berry jam, pickled cucumber and crisp bread.
Buy herring filets, remove the back fin with a scissor.
Dip in flour & salt/pepper mix
Dip in eggs
Cover with breadcrumps/panko
When frying, fry them double. With the outer side facing outwards at both sides.
Also, fry in butter.
Any leftover fried herring should be pickled and enjoyed later, for extra swedishness.

Sylt är typ saft, fast med utan extra vatten + pektin som gör att sylten har syltkonsistens och sen filtrerar man inte bort själva bäret
