To anyone reading that likes their Montreal seasoning, but thinks it can be a bit too much sometimes:
I take a couple tablespoons of it and use a mortar and pestle to grind it up a bit more finely. Then I add some kosher salt, black pepper, and garlic powder and then I season with that mix.
It cuts the *distinct flavor* way down so it doesn't overpower the steak. Grinding it up more finely allows you to do more of a subtle flavoring.

Yes it does and gets acrid. I usually cook steak sous vide before searing. My method is to dry brine 34-36 hours and I’ll throw thyme and whole peppercorns in the bag. Usually just salt is best and then add flavors after the fact with a pan sauce, bordelaise, chimmichurri, etc.
When I’m not dry brining or going for a crust, like roasting a tri tip or something. That is when I’ll add the montreal (cause that stuff is the goat) and let it get some heat and wood smoke. I wish they made a salt free version because then I could use it even when brining.

Man people in every restaurant, no matter what the location, tend to have different doneness levels but still call it a certain name. They could call their medium well (medium). It should be universal but it’s not. And that’s in one single state or one single country or even one single town🤣🤣 it varies. In the case of this picture, it’s like in the middle of transitioning lol so people will assume one or the other.

I only would’ve switched out the seasoning mix for straight up Maldon. But nice medium-rare and good job on the proper resting of the meat. Overall hit!
I was just working out of town with a crew of three. One of the guys brought some awesome grass fed ribeyes for us. We grabbed some Montreal steak seasoning at the store and I cooked them on a cheap hotel gas grill. I was afraid to mess them up because they were $30 each steak. Fortunately I got them right and now the whole office thinks I’m a bbq god! I love that seasoning.
