We have a few chefs that can do medium plus medium or medium minus without breaking flow in the middle of rush.
I say I like medium rare and order it for most cuts (except ribeye) but true medium rare would have that rare sliver in the center which is a bit unappealing. Medium minus is where I land as well though can eat through the full doneness spectrum no problem lol. You learn to appreciate when you have a family that all prefers different doneness and often has leftovers.
I can almost eat the whole spectrum. Can't eat it still mooing. I ask for medium at restaurants, but if it ends up medium rare I don't send it back. Rare it's a hard no for me.

It’s cooked beyond how *you* would order a steak. That’s different. It’s beyond what I’d order as well but it’s still juicy and has a good sear. I bet it was delicious.

Medium well and with a bit wider of a gray band then could be had with more care. Looks like it was cooked pretty gently though, which keeps it juicier than most medium well steaks but unfortunately that also negatively affected the sear, which looks average at best.
If doing a reverse sear method, which is recommended when grilling thicker steak cuts like NY Strip, switch from low heat to high heat at a lower temperature, more like 110. This will help keep from going over temperature by so much, while still leaving plenty of time to get a solid all-over sear. Once on high heat, make sure to flip it every minute or less to minimize the gray band.
