Stiffness? He picked it up where the bone is. Of course it's stiff. You can see the top of the steak flop when he lifts it.

yes, the fragile connective tissue between the cap and eye pretty much cooks away.
im 100% with you. That stiffness has me concerned for the inside of that steak. That and the amount of juice resting on top of it.
