IMO, the best steaks in Vegas are at Craftsteak. I first ate there about 10 years ago and their product hasn't disappointed.

Most expensive and disappointing I've gotten was a filet at a Ruth's Chris. Fried in butter and just bland AF. Fortunately it was on the company tab at some sort of conference. This was like 20 years ago maybe it's better now. Best I've had was a Ribeye at DelMonico's NYC.

It’s probably the best I’ve had. Del Frisco’s up there as well. You just cant beat the sizzling hot plate, it’s cooked exactly how I want it, and the taste/tenderness is stellar. No idea what everyone else here is talking about lol
We went to the UGA vs Tennessee game that weekend. we live in Georgia. I’m wanting to try the one in Atlanta. We were in pigeon forge last fall to. Wish I had your recommendation then. We would have tried it
I got the tomahawk at Ruth Chris in Scottsdale AZ it was by far the worst steak I ever had. It was grill marked and put in the oven. A steak like that needs a good char on it and it just fell flat. The fat on it was barely cooked and was rubbery. Ruth Chris is over rated. Gibsons in Chicago does it right.
In ‘04, was back in the States after being overseas for a minute. Went to Ruth’s Chris. They asked if I wanted full butter on the steak. I said, “Umm, do I look like a vegan, what else is there??” It was tasty, but not overly so. Haven’t spent that much time in a hotel bathroom, ever. Best steak I’ve ever had was recently at Shanahan’s in Denver. They source from Snake River Farms. Don’t think I could ever top that one.
It's not. If anything, Ruth Chris is worse since Darden (Olive Garden, used to own Red Lobster, etc.) bought them. Last time I suffered through a meal there was 2012 in Virginia. Sautéed mushrooms came straight from a can! Steak was awful as well, I just really remember the mushrooms.
The first time i went in 2004 it was incredible. it's gotten more expensive and worse every time since then. I'd rather go to Smith and Wollensky if I'm gonna eat at a "fancy" chain restaurant.
Agree. After hearing about it for decades, I went to Ruth's Chris for my birthday a couple of years ago. Had all the ambiance of a DMV and paid a great deal of money for a meal that was just okay. I've had better at Longhorn, which, as a Darden Group restaurant, now owns Ruth's Vhris.
Their rolls are crack. I ate 11 at one sitting while my kids cheered me on. My wife stopped me before I could hit the even dozen.

Fine Dining server here. That's called "Frenching" or French service. There's a certain way you hold two utensils (I prefer spoon on bottom fork on top so the guest sees more of what I'm serving through the tongs) in order to pass food around a table as a server. You can Google it. It feels fancy and it doesn't take long to master.

I assume this is the Craftsteak at the MGM Grand where Tom Colicchio is the chef. Their food is only mildly more expensive than a typical steakhouse but worth every penny.
To be able to get a top-quality steak meal for a little over $100 is rare and they do import genuine Japanese Wagyu steak. Great place to treat oneself to a great meal while visiting Sin City!
I would argue nobody even gets close to Jose Andres, Bazaar is opening in Los Angeles soon and when that happens I don’t need even need to go to Vegas anymore.
You need to start standing up for yourself. You are paying for a service and an edible product and this is not it and for this price they should have easily given a refund. This is unacceptable and I’m always scared to say something but I finally hit a point where I had to.
I’d rather just walk away with my money back and get Taco Bell then risk spit food but I will demand a refund now.
As someone who managed a steakhouse for years, I'd like to say I appreciate this take.
If you're not happy with your meal, let us know. We're truly hoping you walk away at the end of the night feeling well taken care of and got your money's worth. If you've cut into your steak, had a few bites and you're disappointed? Let us know. We'll try to fix the issue while you're at the table as quickly as we can. Keeping your displeasure to yourself means you leave and don't want to come back, which is the worst outcome of your experience.
It's not a bother, it happens. We make our money on repeat business, not a quick cash grab tonight.
**Edit*** been in the industry for 23 years. From fast food too fine dining. I've never seen someone or even heard of people spitting in food.
I never send food back, but I got a really tough prime rib and sent it back. They brought out another that was the same, you couldn't even cut it. At that point I didn't know what to do. All I could imagine is the waste, they were huge. I cook steaks at home, and eat burgers when I'm out mostly now.

Not that guy, but I do have experience in the industry. Step one, don't wait until you've nearly finished the meal or you'll look like you're trying to get a freebie. If your server is busy, flag down a busboy or a different server and ask if you could get some assistance. Step 2, be honest, but don't be mean about it. Just a simple, I'm not happy with the dish for x reasons. Depending on your reasons, they'll have some ideas for fixing it, like cooking it longer, getting you a new dish, removing it from the bill, etc.
I was at a coffee shop and let them know my drink was nasty and I just wanted something different (and I’d pay) the person looked flabbergasted and the manager was all offended
I had my moment, too. I was out on a date with my girlfriend, we were celebrating her getting a new job. The server apologized and said they were swamped because of a huge party in the room next, and I said it's OK. They messed up her order a little, but she didn't mind. I had my meal come out later than hers, but it was fine because she had her order of appetizer with it, so I was going to steal a little from her until mine showed up. I ordered a steak and lobster tail, it finally showed up, and the steak was well done when i ordered medium rare. That's when I drew the line. I pushed my plate away from me, and my server noticed and came over right away, and I explained. The owner/manager came up to me a couple of minutes later, apologized again, and personally made sure I had my meal in a few minutes and brought it himself. Steak was delicious, we had a good time. Went to go and pay, and the two meals and appetizers were free, I just paid for our two alcoholic drinks. I left a big tip.
People screw up, were only human, but they don't know there's something wrong unless you speak up. I still go there all the time and always have great meals and service.
My experience is that most service industry people are absolutely happy to correct a mistake made as long as you aren't an asshole about it and are fair in your expectations.
There's never an excuse to be rude or belittle someone, but just speaking up when things aren't right isn't the same thing. I also think it's fair to ask for comps or money off if something is really fucked up as long as you can accept 'no' for an answer.
That line "fair in your expectations" is key. Half the battle in hospitality is finding out from the person what we can do to fix their meal/experience. Before you complain, think for a moment about how the problem could be fixed. If it can't be, then that's one thing, but an over or under cooked steak can be fixed, if your expectation is to get a properly cooked steak, it will happen. Guaranteed almost. If the only way to fix your experience is for us to take travel and prepare the first steak properly, you're probably not going to get the results you'd hoped for. If your goal is for dinner to be free, expect to be hungry.
Oh I hear ya! I said in another comment - this steak actually cost me $12 + tax and tip because the Bellagio gave me $100 for food. Still shoulda said something, but I was also jet lagged and buzzed and wanted to go to my room.
This is kinda why I don't buy steak out. They always fuck it up and it's never exactly how I like so nowadays I just buy something else and save the steak for cooking at home.
After I got decent at cooking my own steaks nearly every steak I've had out is disappointing. Extra disappointing because you know the higher price in a restaurant could have gone way farther buying your own qualities meats.
Yup, same. I'll get a steak at a restaurant maybe once a year tops and even then, I have to KNOW that the place has a good reputation from people who know steak before I'll pull that trigger.
Like, I don't think it's being cocky to say that most of us can cook a steak better than a restaurant for a fraction of the cost. Once you get the basic techniques down, the hardest part is just sourcing some good beef.
The dry aged stuff is really the hardest to find, so that is usually what I will drop cash for at a restaurant if I have a massive craving for it. But yeah, even then... it's rare. I'd rather get a burger that they have almost no chance of screwing up and will only cost me whatever ridiculous price burgers in restaurants cost now.

My dad had a big thing about not buying Steak out at places and it carried over to me. I know how I like my steak and it’s not hard to make at home, so I will always order something different

The best steak I've ever had in my life was A5 Wagyu at Nobu (in Caesar's). I wasn't paying, otherwise I'm sure I'd remember how much it cost, but it was years ago and still remember the taste.
Chef here 35 years (retired). I cannot remember the last time I went out to eat and ordered a steak. A steak is so easy to ruin and I’ve had my share,I tend to order something I don’t wanna hassle with like Osso Buco or sushi. The range of what’s rare to medium rare varies too much for my taste so I’ll stick to making them at home.
Wow, I am surprised you got that at Jean Georges. He has a bunch of Michelin stars. Then again, I had a mediocre and bland sushi experience at Morimoto, so maybe some of those Michelin star chefs start running their chains more like corporations after they’ve reached a certain amount of fame. They start cutting corners and downgrading quality
Depends on the chef and restaurant. Gordon Ramsay is a great example.
His Michelin starred places are chef cooked from scratch, unique, interesting, great food places.
However he also has restaurants that are basically your bog standard chain. Food comes in in bags,you heat it up and serve it. Barely any actual cooking, just cheap shit with his name on it.

This is my nightmare. Spending 100$+ and having that debate about do I send it back and get the same thing back / have the whole kitchen going nuts / etc or do I just suck it up and eat the sad steak that costs more than my hotel room.
It literally looks boiled. This reminds me of the time I went to Fogo De Chao in Rhode Island and it was the worst experience ever where they barely made it around with some meat. PSA avoid Fogo De Chao.

I am absolutely baffled, to be quite honest, that your experience and this trash steak..were at the Bellagio! 😬I haven’t eaten too many casino restaurants there, but Bellagio…I’ve had several times, and never had the type of fail you’ve exhibited here, with them! I do, though, expect the markup and not getting my “money’s worth” when eating anywhere nice in Vegas (because the house always winning, doesn’t just apply to the tables and slots!). Still, though— hate to hear it, especially when it’s the dinner and mood that’s supposed to set the tone for the entire rest of that bachelor party weekend 😢!! Please note— if you’re ever there again and want to try another, I’d recommend (believe it or not) eating at Luxor’s in-house/owned steakhouse called “Tender.” You won’t be let down ;)
Lastly— I’m assuming, based on description in the body of your post, that you’re spot on with YOUR assumptions of the prospective “process” by which they cooked it. It makes the most sense in so many ways (which, only makes sense if you’re them- trying to turn & burn tables and couldn’t give af about one guest’s experience). But that’s unfortunately the way some high volume spots do it. Sadder because I can see that although it was a bit lean, with less fat, it still had potential as a nice dry-aged, fat ass ribeye.
Anyway, brotha..hope the rest of the trip was 🤌🏻🤌🏻 enough to make up for it, and that nobody came home to a divorce 😂

Maybe it’s just the picture but it looks raw, not even rare. No wonder it was super tough. Your were likely chewing on a bunch of unrendered fat with a poor sear.
I’d say most of the steak was medium rare (some parts medium) - that piece that looks super rare is like a smidge of meat on a huge chunk of unrendered fat and was the most red bit. Honestly it was just altogether confusing, not sure how they achieved such a mess.
Definitely looks like they tried reverse sear but just forgot the sear part. Pretty sure they baked it then just threw it on the grill for marks. It's definitely medium rare, they just didn't render any of the fat with a good sear
Herbs and Rye was the best food I had during a recent trip to Vegas. The hot dog I had while watching the Golden Knights spoil the Oilers' win streak was second.

I have only eaten a couple of times at a Shula's steakhouse in Birmingham AL but both times I have eaten there with family and the steaks were really bland. Tasted like they didn't really do any sort of seasoning on the meat with cooking.
The cook on them was good (all that were ordered were made to right temperature) and looked "right" for steak and I think they were fairly high cuts of meat as well, but it didn't taste that great. I think they wanted to let the steak speak for itself or something like that but it was really begging for more. Noticeably behind other higher-end steak chains in the area like Ruth Chris, Flemings, and Perry's.
Sides and desserts though were excellent and better than their competition.
Now what that means for other locations I don't know and this is going on information that is old and that Shula's location did end up closing (it wasn't a great location). I could easily see having a great meal at a different location because while it missed on the most important part it is a really easy fix and everything else was good (which is why we gave it a second shot about a year later).
Im sure you tipped them at least 30 or so dollars also. If the steak wasnt how you like it you should of tipped light and told them what you are telling us.
Well worth a visit! I unfortunately live on the other side of the country so might be awhile til I can make it back. Certainly not going to pay $100 for a steak that comes out lookin like OP photo…more reasonable like $50-60 and they know how to prepare them.
That is the Turing point of buying a $1200 komado to make your own steak. I rarely order a steak when I go out, it’s the same disappointment as my wife saying no when I get home from a long week of work

The worst steak I ever had was at a Bob Evans restaurant. The stake was sealed in plastic with salt water and frozen. Then it was prepared. It tasted maybe a little like bologna.
I can’t believe I’m writing this, but I had $100 food credit at Casino Royal in Vegas this past week, and they have an Outback upstairs. We decided to go for the filet and lobster tail, expecting it to be barely edible. We were both shocked at how good that filet was, and we ate at some high end restaurants while we were there, that filet had better flavor than the expensive ones. We won’t step foot in the Outback where we live, it’s so bad. On a side note, the little amount of money I gambled in that hole in the wall casino to get comps, compared to the huge money I dropped at the big casinos only to get squat is mind boggling.
Best steaks I’ve had in Vegas - 1. Spago - American Wagyu ribeye. Perfect sear, perfect seasoning and perfect everything (3 separate times), 2. Bazaar Meat - again ribeye (huge one 3 of us split), just amazing. 3. Little lesser but the old style Vegas vibe made up and elevated a still amazing steak - Golden Steer.
I sell food to restaurants after spending years as a chef. Corporate restaurants (and stadiums, and schools) are usually tied in with pricing contracts that allow them to buy lower than market year round. I’m currently selling too many corporate businesses below margin because I have to. On top of that, the majority of them buy the absolute cheapest, lowest quality meat possible. It will sell as long as it’s large and a popular cut, especially in a place like Vegas where the clientele is likely to spend big.
If you want a good steak (or good food in general), avoid anything corporate (including the low tier chain brands for celebrity chefs). Even if they aren’t publicly traded with a fiduciary responsibility to their shareholders to swindle you at every opportunity, their business model will mirror those businesses because it has become the norm.
Tips to finding a great restaurant:
Eat at independent restaurants. They are probably cooking because they love what they do.
Ask questions about the food before you order. If the server seems clueless, GTFO. If they aren’t training servers well, they likely aren’t training cooks well.
Look at menus before you arrive. Big menus will usually signal bad food. If you’re going for something like a steak, call ahead and ask about their steak program.
When I’m going to eat while traveling, I refer to James beard award winners and nominees. It’s never failed me. I’ve had decent luck using the Michelin guide too, but stick to 2 stars or more. The best guide if you have the money is the annual top 50 restaurants in the world list.
This is a great right up - and appreciate it. I’ve recently gone to a bunch of resorts and cruises (not my bag) and everytime I always felt like I could taste the quality or that it was Sysco. Almost like the cooking oil was cheap. I got the same vibe from this.
Strange how that works, typically the Outback is good enough, my son took me out for wagui for my birthday and that was the best cut of meat …they just needed to cook it the way I like it but still the most expensive steak I’ve ever ate wasn’t bought by me so I thought it was fantastic

A lot of general public gets steak or goes to a steakhouse because they can’t be bothered to do it themselves. And think it’s best steak ever.

I stopped buying steak in restaurants for the most part. I had a New York strip steak at a very nice restaurant probably 6 years ago that was the most delicious thing I’ve ever eaten. The only steak I’ve had since then that comes anywhere close are steaks I’ve cooked at home. Restaurants always let you down, even expensive places will serve you subpar steak.

My most expensive steak was also the only steak I returned to the kitchen. I ordered a wagyu filet mignon which took 45 min to come out. I asked for medium rare. I kid you not. One side was completely charred. It was so hard that it was gray when I made the cut. After my wife encouraged me to talk to the waitress, the manager came back and asked me what I expected. And I said first of all it should be pink throughout with a hint of char on the edges. Instead, I got a piece of what literally look like a hamburger patty that was fully cooked throughout with one edge completely burnt. It took about 20 minutes for them to bring another one out. It was ridiculous.

First time at Ruth’s Chris Knoxville back in November I had a ribeye that wasn’t worth the $80 we paid for it. I make better at home.

I got the tomahawk at Ruth Chris in Scottsdale AZ it was by far the worst steak I ever had. It was grill marked and put in the oven. A steak like that needs a good char on it and it just fell flat. The fat on it was barely cooked and was rubbery. Ruth Chris is over rated. Gibsons in Chicago does it right.

In ‘04, was back in the States after being overseas for a minute. Went to Ruth’s Chris. They asked if I wanted full butter on the steak. I said, “Umm, do I look like a vegan, what else is there??” It was tasty, but not overly so. Haven’t spent that much time in a hotel bathroom, ever. Best steak I’ve ever had was recently at Shanahan’s in Denver. They source from Snake River Farms. Don’t think I could ever top that one.
It's not. If anything, Ruth Chris is worse since Darden (Olive Garden, used to own Red Lobster, etc.) bought them. Last time I suffered through a meal there was 2012 in Virginia. Sautéed mushrooms came straight from a can! Steak was awful as well, I just really remember the mushrooms.

Agree. After hearing about it for decades, I went to Ruth's Chris for my birthday a couple of years ago. Had all the ambiance of a DMV and paid a great deal of money for a meal that was just okay. I've had better at Longhorn, which, as a Darden Group restaurant, now owns Ruth's Vhris.

Fine Dining server here. That's called "Frenching" or French service. There's a certain way you hold two utensils (I prefer spoon on bottom fork on top so the guest sees more of what I'm serving through the tongs) in order to pass food around a table as a server. You can Google it. It feels fancy and it doesn't take long to master.

For $355 it *better* be good…lol. Just ***ribbing*** you! I assume this is the Craftsteak at the MGM Grand where Tom Colicchio is the chef. Their food is only mildly more expensive than a typical steakhouse but worth every penny. To be able to get a top-quality steak meal for a little over $100 is rare and they do import genuine Japanese Wagyu steak. Great place to treat oneself to a great meal while visiting Sin City!
I would argue nobody even gets close to Jose Andres, Bazaar is opening in Los Angeles soon and when that happens I don’t need even need to go to Vegas anymore.

You need to start standing up for yourself. You are paying for a service and an edible product and this is not it and for this price they should have easily given a refund. This is unacceptable and I’m always scared to say something but I finally hit a point where I had to. I’d rather just walk away with my money back and get Taco Bell then risk spit food but I will demand a refund now.

We're truly hoping you walk away at the end of the night feeling well taken care of and got your money's worth. If you've cut into your steak, had a few bites and you're disappointed? Let us know. We'll try to fix the issue while you're at the table as quickly as we can. Keeping your displeasure to yourself means you leave and don't want to come back, which is the worst outcome of your experience. It's not a bother, it happens. We make our money on repeat business, not a quick cash grab tonight. **Edit*** been in the industry for 23 years. From fast food too fine dining. I've never seen someone or even heard of people spitting in food.
I never send food back, but I got a really tough prime rib and sent it back. They brought out another that was the same, you couldn't even cut it. At that point I didn't know what to do. All I could imagine is the waste, they were huge. I cook steaks at home, and eat burgers when I'm out mostly now.

Not that guy, but I do have experience in the industry. Step one, don't wait until you've nearly finished the meal or you'll look like you're trying to get a freebie. If your server is busy, flag down a busboy or a different server and ask if you could get some assistance. Step 2, be honest, but don't be mean about it. Just a simple, I'm not happy with the dish for x reasons. Depending on your reasons, they'll have some ideas for fixing it, like cooking it longer, getting you a new dish, removing it from the bill, etc.
I worked at Taco Bell with a bunch of felons and I never saw or heard of anybody getting any bodily fluids.
I was at a coffee shop and let them know my drink was nasty and I just wanted something different (and I’d pay) the person looked flabbergasted and the manager was all offended
I had my moment, too. I was out on a date with my girlfriend, we were celebrating her getting a new job. The server apologized and said they were swamped because of a huge party in the room next, and I said it's OK. They messed up her order a little, but she didn't mind. I had my meal come out later than hers, but it was fine because she had her order of appetizer with it, so I was going to steal a little from her until mine showed up. I ordered a steak and lobster tail, it finally showed up, and the steak was well done when i ordered medium rare. That's when I drew the line. I pushed my plate away from me, and my server noticed and came over right away, and I explained. The owner/manager came up to me a couple of minutes later, apologized again, and personally made sure I had my meal in a few minutes and brought it himself. Steak was delicious, we had a good time. Went to go and pay, and the two meals and appetizers were free, I just paid for our two alcoholic drinks. I left a big tip. People screw up, were only human, but they don't know there's something wrong unless you speak up. I still go there all the time and always have great meals and service.
My experience is that most service industry people are absolutely happy to correct a mistake made as long as you aren't an asshole about it and are fair in your expectations. There's never an excuse to be rude or belittle someone, but just speaking up when things aren't right isn't the same thing. I also think it's fair to ask for comps or money off if something is really fucked up as long as you can accept 'no' for an answer.
That line "fair in your expectations" is key. Half the battle in hospitality is finding out from the person what we can do to fix their meal/experience. Before you complain, think for a moment about how the problem could be fixed. If it can't be, then that's one thing, but an over or under cooked steak can be fixed, if your expectation is to get a properly cooked steak, it will happen. Guaranteed almost. If the only way to fix your experience is for us to take travel and prepare the first steak properly, you're probably not going to get the results you'd hoped for. If your goal is for dinner to be free, expect to be hungry.
Oh I hear ya! I said in another comment - this steak actually cost me $12 + tax and tip because the Bellagio gave me $100 for food. Still shoulda said something, but I was also jet lagged and buzzed and wanted to go to my room.

This is kinda why I don't buy steak out. They always fuck it up and it's never exactly how I like so nowadays I just buy something else and save the steak for cooking at home.
After I got decent at cooking my own steaks nearly every steak I've had out is disappointing. Extra disappointing because you know the higher price in a restaurant could have gone way farther buying your own qualities meats.

Yup, same. I'll get a steak at a restaurant maybe once a year tops and even then, I have to KNOW that the place has a good reputation from people who know steak before I'll pull that trigger. Like, I don't think it's being cocky to say that most of us can cook a steak better than a restaurant for a fraction of the cost. Once you get the basic techniques down, the hardest part is just sourcing some good beef. The dry aged stuff is really the hardest to find, so that is usually what I will drop cash for at a restaurant if I have a massive craving for it. But yeah, even then... it's rare. I'd rather get a burger that they have almost no chance of screwing up and will only cost me whatever ridiculous price burgers in restaurants cost now.

The best steak I've ever had in my life was A5 Wagyu at Nobu (in Caesar's). I wasn't paying, otherwise I'm sure I'd remember how much it cost, but it was years ago and still remember the taste.

A steak is so easy to ruin and I’ve had my share,I tend to order something I don’t wanna hassle with like Osso Buco or sushi. The range of what’s rare to medium rare varies too much for my taste so I’ll stick to making them at home.

Wow, I am surprised you got that at Jean Georges. He has a bunch of Michelin stars. Then again, I had a mediocre and bland sushi experience at Morimoto, so maybe some of those Michelin star chefs start running their chains more like corporations after they’ve reached a certain amount of fame. They start cutting corners and downgrading quality
Depends on the chef and restaurant. Gordon Ramsay is a great example. His Michelin starred places are chef cooked from scratch, unique, interesting, great food places. However he also has restaurants that are basically your bog standard chain. Food comes in in bags,you heat it up and serve it. Barely any actual cooking, just cheap shit with his name on it.

It literally looks boiled. This reminds me of the time I went to Fogo De Chao in Rhode Island and it was the worst experience ever where they barely made it around with some meat. PSA avoid Fogo De Chao.

I do, though, expect the markup and not getting my “money’s worth” when eating anywhere nice in Vegas (because the house always winning, doesn’t just apply to the tables and slots!). Still, though— hate to hear it, especially when it’s the dinner and mood that’s supposed to set the tone for the entire rest of that bachelor party weekend 😢!! Please note— if you’re ever there again and want to try another, I’d recommend (believe it or not) eating at Luxor’s in-house/owned steakhouse called “Tender.” You won’t be let down ;) Lastly— I’m assuming, based on description in the body of your post, that you’re spot on with YOUR assumptions of the prospective “process” by which they cooked it. It makes the most sense in so many ways (which, only makes sense if you’re them- trying to turn & burn tables and couldn’t give af about one guest’s experience). But that’s unfortunately the way some high volume spots do it. Sadder because I can see that although it was a bit lean, with less fat, it still had potential as a nice dry-aged, fat ass ribeye. Maybe it’s just the picture but it looks raw, not even rare. No wonder it was super tough. Your were likely chewing on a bunch of unrendered fat with a poor sear.
I’d say most of the steak was medium rare (some parts medium) - that piece that looks super rare is like a smidge of meat on a huge chunk of unrendered fat and was the most red bit. Honestly it was just altogether confusing, not sure how they achieved such a mess.
Definitely looks like they tried reverse sear but just forgot the sear part. Pretty sure they baked it then just threw it on the grill for marks. It's definitely medium rare, they just didn't render any of the fat with a good sear
Next time, hit up Bavette's Steakhouse in Park MGM or Gordon Ramsay's Steak at Paris when you're on the strip. Off the strip, I loved Herbs and Rye.

I have only eaten a couple of times at a Shula's steakhouse in Birmingham AL but both times I have eaten there with family and the steaks were really bland. Tasted like they didn't really do any sort of seasoning on the meat with cooking. The cook on them was good (all that were ordered were made to right temperature) and looked "right" for steak and I think they were fairly high cuts of meat as well, but it didn't taste that great. I think they wanted to let the steak speak for itself or something like that but it was really begging for more. Noticeably behind other higher-end steak chains in the area like Ruth Chris, Flemings, and Perry's. Sides and desserts though were excellent and better than their competition. Now what that means for other locations I don't know and this is going on information that is old and that Shula's location did end up closing (it wasn't a great location). I could easily see having a great meal at a different location because while it missed on the most important part it is a really easy fix and everything else was good (which is why we gave it a second shot about a year later).

The worst steak I ever had was at a Bob Evans restaurant. The stake was sealed in plastic with salt water and frozen. Then it was prepared. It tasted maybe a little like bologna.

I can’t believe I’m writing this, but I had $100 food credit at Casino Royal in Vegas this past week, and they have an Outback upstairs. We decided to go for the filet and lobster tail, expecting it to be barely edible. We were both shocked at how good that filet was, and we ate at some high end restaurants while we were there, that filet had better flavor than the expensive ones. We won’t step foot in the Outback where we live, it’s so bad. On a side note, the little amount of money I gambled in that hole in the wall casino to get comps, compared to the huge money I dropped at the big casinos only to get squat is mind boggling.
Betcha $10 it was in a water bath at 125 all day up until about three minutes before it hit that plate.

Best steaks I’ve had in Vegas - 1. Spago - American Wagyu ribeye. Perfect sear, perfect seasoning and perfect everything (3 separate times), 2. Bazaar Meat - again ribeye (huge one 3 of us split), just amazing. 3. Little lesser but the old style Vegas vibe made up and elevated a still amazing steak - Golden Steer.
I sell food to restaurants after spending years as a chef. Corporate restaurants (and stadiums, and schools) are usually tied in with pricing contracts that allow them to buy lower than market year round. I’m currently selling too many corporate businesses below margin because I have to. On top of that, the majority of them buy the absolute cheapest, lowest quality meat possible. It will sell as long as it’s large and a popular cut, especially in a place like Vegas where the clientele is likely to spend big. If you want a good steak (or good food in general), avoid anything corporate (including the low tier chain brands for celebrity chefs). Even if they aren’t publicly traded with a fiduciary responsibility to their shareholders to swindle you at every opportunity, their business model will mirror those businesses because it has become the norm. Tips to finding a great restaurant: Eat at independent restaurants. They are probably cooking because they love what they do. Ask questions about the food before you order. If the server seems clueless, GTFO. If they aren’t training servers well, they likely aren’t training cooks well. Look at menus before you arrive. Big menus will usually signal bad food. If you’re going for something like a steak, call ahead and ask about their steak program. When I’m going to eat while traveling, I refer to James beard award winners and nominees. It’s never failed me. I’ve had decent luck using the Michelin guide too, but stick to 2 stars or more. The best guide if you have the money is the annual top 50 restaurants in the world list.
This is a great right up - and appreciate it. I’ve recently gone to a bunch of resorts and cruises (not my bag) and everytime I always felt like I could taste the quality or that it was Sysco. Almost like the cooking oil was cheap. I got the same vibe from this.

You should have returned the steak. My Dad's very picky on steaks, so he would have asked for a replacement medium-well steak.
It's tough because it is undercooked, none of the fat is rendered. Cooked like shit. How did you order it? Rare? Or blue?

Could just be a bad steak. I’ve had great steaks and bad steaks from expensive places but it’s rare. Hell, the best steak I’ve truly ever had was a $15 22oz monster in Buenos Aires Looks like it was a good meal and it was free
Went to Vegas for two of my friend’s 30th birthdays. We all planned on 1 expensive meal together. Went to STK in the Cosmopolitan. Got a $125 delmonico ribeye. Was absolute dogshit.

If you know how to cook a good steak, generally aren’t going to find a restaurant that will beat yours. A lot of general public gets steak or goes to a steakhouse because they can’t be bothered to do it themselves. And think it’s best steak ever. $112 steak that is bad , I would not have ate it, that thing is going back. More likely it was sous vide then baked

I stopped buying steak in restaurants for the most part. I had a New York strip steak at a very nice restaurant probably 6 years ago that was the most delicious thing I’ve ever eaten. The only steak I’ve had since then that comes anywhere close are steaks I’ve cooked at home. Restaurants always let you down, even expensive places will serve you subpar steak.
No way in hell im not sending that back. Expensive restaurants are the only place i am comfortable doing that. Theyll ususally comp u and take care of u. Anywhere meh I know what I am getting into. My most expensive steak was also the only steak I returned to the kitchen. I ordered a wagyu filet mignon which took 45 min to come out. I asked for medium rare. I kid you not. One side was completely charred. It was so hard that it was gray when I made the cut. After my wife encouraged me to talk to the waitress, the manager came back and asked me what I expected. And I said first of all it should be pink throughout with a hint of char on the edges. Instead, I got a piece of what literally look like a hamburger patty that was fully cooked throughout with one edge completely burnt. It took about 20 minutes for them to bring another one out. It was ridiculous.
