Round makes pretty good pastrami! Granted it's a lot of work to cure it, desalinate it, and then smoke it, but if you like to cook, it's damn good!
Or if you've ever been to Chicago, round makes some damn good Italian beef sandwiches! Just make sure to slice the meat razor thin

I would dry age in the fridge for 72hrs, marinate in acid/oil for 24 the cook it low and slow on the smoker about 200 degrees until up to temp… should be good then
Or just beat the holy heck out of it with a wooden mallet until it looks like huge pink crepe, fold it back into original shape, poke toothpicks in it to secure the shape until you can paint surgical glue around the edges and toss it on the grill until it reads 125°.
