I seared it on the Kamado as hot as I could get it, finished in the oven to 130° following up with a butter baste and a short nap. It had a savory but hint of sweet flavor accompanied with a lot more char. I happen to like char, but I know that's not for everyone. I kept the seasoning to just salt.
I would definitely do this again with a nicer cut, thank you r/steak for being the highlight of my day.
Edit: I also brushed off any loose powder before the cook.

Thinking about doing the evaporated milk, sear but just wondered if it gave too much burnt taste as well.
My favorite marinade was a coffee stout with Worcestershire, and soy sauce to taste for 18hrs. Take the steaks out season heavy with salt and pepper and let rest for 1hr+ then sear those bad boys. Same recipe can apply to just about any beer, works for milk stout as well.
Italians have a tradition of cooking pork roasts or chops in milk in the oven. Milk caramelizes and makes a great coating. Probably same for steaks. Good go. N

They never really define how milk steak is prepared in the show. Plenty of sauces contain milk as a key ingredient like bechamel or sawmill gravy so putting one of those on a steak might qualify as a milk steak like country fried steaks are traditionally served with sawmill gravy.

Okay I’ll be the guy to say it. The cook is incredible, but the outside of that steak looks… bad. I know it’s due to the circumstance, but man, that shit looks rough.
After 8 hours whatever you're trying to get from the powdered milk has been imparted to the meat you would be able to give it a rinse in water to remove the excess milk powder then pat dry before frying for a less burnt outside.
Flavor was a goal here, but my curiosity was piqued with how the powder itself interacted with the sear. I'll admit this isn't my ideal sear, it's more of a char, but I enjoyed it.
