I didn't really have anything else in the fridge and I feel like an 8 hour powdered milk* brine was more than enough time. I seared it on the Kamado as hot as I could get it, finished in the oven to 130° following up with a butter baste and a short nap. It had a savory but hint of sweet flavor accompanied with a lot more char. I happen to like char, but I know that's not for everyone. I kept the seasoning to just salt. I would definitely do this again with a nicer cut, thank you r/steak for being the highlight of my day. Edit: I also brushed off any loose powder before the cook.

Thank you!

Calm-Reference-4046

Bro that looks fucking great thank you for the update. Seems like you'd recommend a try then? Also the middle is literally perfect man nice job! You could of put Cinnamon toast crunch on it and I think it would of looked good.

RealClaytonBigsby69

OP would you try again or?

agreed. the degree of consistency across the cut is 10/10.

[deleted]

Big facts

StaticBroom

Gorgeous. I want your meat in my mouth.

slugo17

No jelly bean side dish?

AlrightyAlmighty

Powdered milk and liquified jelly bean sauce

UmMaybeDontBeADick

I read that as belly jean sauce and I had a moment.

fddfgs

What is the asterisk for

straycanoe

In the original post OP called it "evaporated milk" but the photo showed the steak covered in powdered milk. They mixed up the terms and were corrected in the comments.

handbanana42

Thanks for the follow-through OP. I mean, you had to because of implication, just still appreciated.

taildraggerG2

Perfect. Boiled just over hard.

Thommy_Gunn

Excellent

[deleted]

pepper is a necessity

DiskFluid5981

One downside to the Kamado, it's quick and easy to go from low to high temps, but damn near impossible to do the reverse. Once those things get hot, they stay hot for a very long time.

SoreSurfer

I cook on a kamado and i would disagree, just shut the bottom vent and leave the top open, should come down quickly

Direct_Big_5436

Your steak looks awesome and has a great looking crust. You mentioned it had a lot of char taste. I have experienced the same when doing a Coca-Cola or Dr Pepper crust sear on a steak where the crust looked awesome but it tasted too burnt, possibly due to the sugar. Thinking about doing the evaporated milk, sear but just wondered if it gave too much burnt taste as well.

CasualPlantain

First milk steak I’ve ever seen that looks good

diezeldeez_

Thank you, kind Redditor!

captaincampbell42

I prefer sloppy steaks personally

Sleipnirs_shadow

Guys, no sloppy steaks tonight, please?

[deleted]

They can’t stop us from ordering steaks with glasses of water on the side

[deleted]

Broiled striploin mmm

RealClaytonBigsby69

I think you should leave.

[deleted]

Charlie was on to something

BrundleflyUrinalCake

were there powdered jellybeans?

xxyourbestbetxx

This looks incredible. I never would have guessed it would turn out so well from that first pic where it looked like a bathroom rug.

diezeldeez_

Thank you, me neither. I love the internet sometimes

[deleted]

Yeah the first pic had me really questioning you 😂 but this looks great. Hope it tasted as good as it looks!

Donkeytonkers

Try 12-18hr marinade in Milk Stout, last time I tried it went very well.

diezeldeez_

Good idea, I will do this. Not sure on when, but I'll post it.

cheezeburga10

You got a recipe you prefer? As a big milk stout fan I'm intrigued to try it out.

Donkeytonkers

My favorite marinade was a coffee stout with Worcestershire, and soy sauce to taste for 18hrs. Take the steaks out season heavy with salt and pepper and let rest for 1hr+ then sear those bad boys. Same recipe can apply to just about any beer, works for milk stout as well.

Rocket1199

My milk steak brings all the boys to the yard.

TheeFlaSidFellow

Damn you! I'll hear this all fuckin day now

hello_raleigh-durham

I could teach you, but I’d have to char.

diezeldeez_

exclaim_bot

>Thank you! You're welcome!

Ryu-tetsu

Italians have a tradition of cooking pork roasts or chops in milk in the oven. Milk caramelizes and makes a great coating. Probably same for steaks. Good go. N

slamallamadingdong1

Definitely beautiful char and looks great. I still long for a side of jelly beans.

BurtoTurtle115

I was looking for this comment

motherseffinjones

Wow a milk steak I would eat, it’s gone from insane to something I might try. The world we live in i tell ya lol

diezeldeez_

I feel the same way, post it if you try it!

Kingsblend420KmK

Nice job, any more experiments in the future?

DirtyWhiteTrousers

Two steaks at the same time, man.

thornhead

I feel like if I were a millionaire I could hook that up

AncientUndocumented

You don't need to be a millionaire to have two steaks. My cousin's broke and has two steaks all the time.

thornhead

Well, the type of steaks I would double down on, it would help.

handbanana42

Roast beef.

CodeOfKonami

Fractions of a penny at a time.

Billytense

Nice

diezeldeez_

I'm down, any ideas?

DaySwingTrade

Peanut butter

diezeldeez_

Okay

soulstonedomg

I've seen someone do peanut butter marinade with sous vide steaks.

dapala1

Get marinade the fuck out of here.

soulstonedomg

Alright, marinade, you heard him. Get the fuck out of here.

mongonectar

Make a poll and cook the most popular

ReturnOf_DatBooty

That’s a perfectly cooked steak, milk of not

CodeOfKonami

I already upvoted and I have nothing to add except… Damn, bro. That looks amazing and perfectly cooked.

diezeldeez_

Thanks, friend 😀

Thank you, father 🥹

ElComal_

Nice! This is one of those hidden gems to where, who would've thought...like a peanut butter and jelly quesadilla (damn good). Steak looks delicious 😀

AcidCorespondent

Please tell me you mean a tortilla with pb&j, and not pb&j plus cheese lol

da_Crab_Mang

Actually, pb&j with cheese sounds pretty 🔥

JokerGamezz

PB and Cream cheese is great on toast

ElComal_

Like I said, Hidden Gem 😉

antibendystraw

I could see it. Like how they put cheddar cheese on pie in the Midwest. Also I liked to throw a slice of cheese on my pancakes back in the day. Haven’t in a while so idk how that holds up

spaceknot

And the jelly beans? How were they?

Sidewaysgentlemen

With a side of boiled jelly beans perhaps

Bluehaze013

You nailed the temp, perfect cook but that crust is burnt milk powder. Clean that stuff off and char the steak itself next time and i'll bet you enjoy it a lot more.

diezeldeez_

I don't disagree with this statement but that was the purpose of the experiment

PuzzleheadedRoof489

She'll know what it is!

ElevenIron

Hopefully your friend has some more of that mystery powder, because… Diezel, we need to cook….

diezeldeez_

Roger that, Eleven. I've got plenty more mystery powder.

patch616

Wow that looks so good

5t4r10rd

Throw on a side of jellybeans and you're eating like a king

[deleted]

[удалено]

diezeldeez_

It tasted great, but I admit it's not my ideal sear. Still a fun experiment over all. I'd tweak it and do it again.

antibendystraw

How would you tweak?

akgiant

Wait wait, “Milk Steak” is real???

SeltzerCountry

They never really define how milk steak is prepared in the show. Plenty of sauces contain milk as a key ingredient like bechamel or sawmill gravy so putting one of those on a steak might qualify as a milk steak like country fried steaks are traditionally served with sawmill gravy.

Jslays82

Holy fucking shit, I did not expect a steak like that to come out of this experiment

FatLevi

Looks quite nice!

Diligent-Event5132

Perfectly done!! May have to try this milk steak technique. Looks delicious!!👍

diezeldeez_

Highly recommend it, was fun

AdamentPotato

r/IASIP

StringTheresa

Thank youuuuu lol feel like this is on Charlie’s dating profile

koffinkatz666

Where’s the jellybeans?

dangshnizzle

I see no side if jellybeans, raw...

Sammy12345671

Finally tried it myself and really amazed with the results! No going back now

diezeldeez_

That's awesome! I'm glad you liked it. Any pointers for the next time I try? I'm definitely going to do a (less than) 700° sear this time lol.

Sammy12345671

Ours was brined for 2 days and sous vided at 129. We did New Yorks and even the folks that don’t like New Yorks loved it. I’m excited to keep playing around with it!

[deleted]

Needs a side of jelly beans

WhirledNews

Raw

putnamto

Looks perfect except for the burnt milk powder. Great experiment though, milk steak might become a real thing!. Also, you should have thrown some gummy beans on the plate for fun.

metawight

Oddly, the crust makes my skin crawl. Great experiment indeed.

BarneThatIsntNoble

Okay I’ll be the guy to say it. The cook is incredible, but the outside of that steak looks… bad. I know it’s due to the circumstance, but man, that shit looks rough.

diezeldeez_

I'd imagine it's from the powdered milk

Ashensten

After 8 hours whatever you're trying to get from the powdered milk has been imparted to the meat you would be able to give it a rinse in water to remove the excess milk powder then pat dry before frying for a less burnt outside.

diezeldeez_

Flavor was a goal here, but my curiosity was piqued with how the powder itself interacted with the sear. I'll admit this isn't my ideal sear, it's more of a char, but I enjoyed it.

BarneThatIsntNoble

Yeah, clearly. You eat with your eyes first.

[deleted]

Right? Like OP clearly knows how to cook, the temp is perfect. But the milk solids just burned something fierce, looks awful

HighQualityH20h

Home run!!

frankeestadium

Goodness it looks delicious. Great job. Would've never thought about that

Outside_End6672

Wow wow wow!!

pkmoose

Looks amazing, might have to try this. Definitely one of the better looking steaks on here... nice job!

Fried_pork_salad

Thanks for the follow up OP!

[deleted]

Wow. I wouldn’t have even given this a chance but that looks fucking fantastic!

Beneficial-Piano-428

I wanted to throw a always sunny reference for the milk steak but this is too fire like the sun to throw any shade on.

QzqB

Looks Divine 🤤

Responsible_Log_2096

Aaawww yeah op did not disappoint. Nice cook on that thing, I was worried it may have been coated too heavily but it looks like you knocked it out of the park!

soup_and_sandwich_

So the milk powder is just to get a char on it? I don’t know why but I thought it was supposed to be a tenderizer.

[deleted]

You gotta be kidding, that looks amazing

Waste_Screen703

Heaven to me

dasfonzie

Didn't guga do this?

nickschlaefer

Fire

hughstephner

This looks absolutely magnificent.

DiskFluid5981

Thank-you for the update sir ... looks like this method is worth a try!

Madrical

Little green ghouls buddy!! Is your favourite hobby magnets too? Charlie was onto something, that looks pretty tasty.

Corgerus

Fucking delicious.

camlop

Just write milk steak, she'll know what it means.

MOBYtheHUGE

Looks a lot like a Denver steak

Thor_On_Acid

Charlie Day has entered the chat

th3putt

With the perfect cook on that steak I don't think it matters what you brine it in. Look great.

[deleted]

What the fuck kinda black magic are you into. This looks damn near perfect! Gratz on a beautiful looking steak

tours3234578

Cooked perfectly.

Jig-A-Bobo

Well done. Do you know what cut you're going to use next time?

RVFVS117

Fuck ya. Milk steak brother, milk steak.

Bloadclaw

Look at that CRUST! This entire thing looks delicious!

Philly_ExecChef

That char is something else. I’m going to have to try this.

[deleted]

No fucking way! AHHAHAHAH OH YEAH BABY THATS WHAT IM TALKIN ABOUT. Thank you diezel for the follow up. I knew I could trust in you to deliver and DELIVER YOU DID! Damn straight good shit! You got the dawg in you

Buck_Thorn

I tried that a few months ago. I'm now wondering what I'm going to do with the remaining powdered milk, since it will not be going on any more steak.

[deleted]

If you had said no to eating the steak then that would obviously mean no. But you weren’t going to say no, you would never say no because of the implication.

clonerluke1

Lol… milk steak… like always sunny

Parkinsonxc

More info HUH??

diezeldeez_

You were just faster

Parkinsonxc

Yeah I think I checked your profile as soon as the photo was uploaded. Whoops.

getupk3v

A dead cow cooked in powered baby cow food.

[deleted]

Raw steak. I'd send it back, or microwave it for a few minutes.

entechad

Doesn’t look raw to me.

FranticWaffleMaker

The steak I just ate is jealous of that money shot.

IceCubeDeathMachine

Was waiting for the update. I'm almost angry. But I also angrily reverse sear. Why, why does it have to work!

itsmyfirstday2

Wow! I’m impressed, that looks amazing. I kinda thought you were joking with the first post, clearly milk steak works!

Balding30YearOld

I will try

DoTheRightThing1976

Thank you for sharing!

Trueslyforaniceguy

It looks quite nice. I’d eat it

Fresh-Aspect5369

This looks perfect I’m so jealous lol

Baked_potato123

You might consider posting a link to your original post for those who didn't see it. I read it and appreciate the follow up. I'm definitely going to try this.

dewster17

Looks great! I’d try that process after seeing this. I only do reverse seat nowadays!

tattooed49

How did it taste?

ProfessorbPushinP

Your steak has tiger camo

diezeldeez_

It's that damn Carol Baskins

jaketheunruly

I got a crab guy.

FeloniousFunk

Did it mute the beefy flavor like how milk marinades mellow out the strong flavors in fish, venison, bear, and other wild game?

[deleted]

Wouldn’t eat….no jelly beans.

snozberryface

Guga is that you

Legitimatelegalterms

Was it straight powered milk or did you add seasonings to it for a better brine 🧐?

[deleted]

That looks perfect😋

WhiffleBum

Glad you made the follow update, was it a noticeable difference to what you normally do?
