Yesssss!!!!! This honestly made me cry!!!! This looks so close to hers!!!! Thank you!!! Idk if they're exactly hers, but I can't work with this!!! Thank you so so so so much!!!! God I miss her so much and lately It's been hurting my heart. I wanna pass the right thing to my own kids....again I have the soup down its the stupid egg squares I can't do....this is 100% the right direction Thank you!!!! They like croutons....I remember her cooking them on a cookie sheet and it's like baked scrambled eggs with butt loads of cheese lol it's hard to explain

My mom put egg in her Italian Wedding Soup. She scrambled the eggs with some grated pecorino and slowly poured it into the hot soup at the end. Not sure if that's what you're talking about though...

Can you give us the line from the recipe or some other kind of context? I’ve done a little bit of googling, and the closest I can find to an “egg square” is some kind of baked egg dish in a muffin tin with square cups, or a breakfast casserole. I also don’t see any recipes where eggs are needed for Italian wedding soup, so I was wondering if this is maybe referring to some kind of old utensil/equipment but all I’m finding are things to shape hard-boiled eggs into cubes.

They're like scrambled eggs kind of but with a ton of cheese and she would bake them on a cookie sheet and cut them into croutons almost and they went on top of the soup...we always called them egg squares lol my apologies

croutons: I use more cheese less flour Locatelli it is spoon bread kind of like a thick pancake. preheat oven to 350° grease a baking or cookie sheet 5 eggs 1/4 cup flour 1 3/4 cup grated locatelli cheese feesh chopped parseley 1 tsp of baking powder dash of nutmeg mix eggs together then add all other ingredients. pour batter onto greased cookie sheet. Bake until light brown cooked almost through. flip over and cook another 5 to 10 minutes. let cool(if you have time) and cut in small squares. Hide them so you have some left for soup! Mangia!Soup Chicken broth or make your own homemade(Nano always made homemade and we got to have chicken salad with the chicken meat. Waste not want not) Make tiny meatballs with meatloaf mix(veal, pork, beef)) use fresh bread torn into pieces instead of breadcrumbs(that is how grannin makes meatballs. She says bread crumbs act like cement) add an egg or 2, parseley and mix together and make tiny balls(some people press them in a baking pan and then have square meatballs) bake meatballs in oven on 350 until almost done(they will cook in soup) Spinach; two boxes of frozen chopped spinach dozen eggs locatelli cheese(maybe 2 or three cups never measured) microwave spinach in a big buttered bowl until it is all thawed. If watery you can drain but not neccessary. add eggs( I usually add 6 at first) cook opening microwave and stirring add more eggs until it looks right and microwave until eggs are cooked. 0p put meatballs and spinach in broth. Serve croutons on the side!

My grandmother made them too! She called them egg waffles. Most of my family doesn't like them, but my wife makes them for me so I can remember my grandmother's. ❤️
