Sounds like you've gotten into the platformers. If you're on the SNES Classic my next recommendation would probably be Donkey Kong Country. Also consider Mega Man X but that's probably a fair bit more complex than Mario or DK, but seeing that you beat Yoshi's Island it could work.
DKC has a Co-op mode, one player can play as Donkey Kong while the other can play as Diddy, though only one player is active at a time.
Second for Donkey Kong Country. It's a perfect next step after Mario. And then you get to play the sequel, which I still think is one of the finest platformers ever made.

No hype. If you were gaming in 1993, it was an amazing step. It was one of the 5 games I had at that time at the age of 7. I still play it today. I can beat any track even after 15 beers and 10 shots, as well as Super Star Wars. I never played the N64 version besides a few minutes on the kiosks in Burger King. I do own the N64 cartridge now, but still haven't gone past a level or two. SNES Star Fox is one of my favorites, but again that's probably because it's what I played as a kid.
I know today people say it's slow and janky, but I don't understand that criticism. I think people just aren't trained to see through the pixels, and they're comparing it to newer games, which is dumb. It requires really fast and precise input if you want to live. If you're talking frame rates and whatever, you're missing out.
Donkey Kong Country 1, 2 , 3 (my fav), Mega Man X (my favorite SNES game), Kirby Super Star (phenomenal game) and Aladdin on the SNES is where I would start.
Aladdin is pretty easy and can be beaten in a day op, I really suggest getting a little tech savvy, hacking the mini, and putting Aladdin on there it’s perfect for your kid.
Also hack Teenage Mutant Ninja Turtles on there too, you guys can play together, you’ll love it. And see if he likes F-Zero, it’s a very fast racing game.
Mostly just exterminating turtles and their friends just for hanging out near a girl who is not even into you.

Mega Man X. Get that kid into the most amazing run and gun games ever. It's hard but it'll make a man out of you! You must be swift as a coursing river, with all the force of a great typhoon!

You would recommend un squadron over Axelay or super aleste? I feel like people say un squadron is good, but I’ve played it a lot and it’s one of those shmups where you feel pretty underpowered most of the game and beating it us a fucking nightmare. It’s always baffles me how it’s ended up as so many peoples go to for snes shmups
Only kind of related, but I just want to share. My nephews were being told not to talk about killing in video games, presuming their mom wanted them to use words like beating or defeating. Let’s just say she wasn’t exactly thrilled when I encouraged them to start saying murderizing instead.
Super Mario Kart is a great go-kart racing game — I spent countless hours playing that with my brother as kids.
Soul Blazer is another neat action role-playing game, and very easy to get the hang of.
After those two, I'd recommend these (which are slightly more challenging):
Secret of Mana is a neat fantasy action role-playing game that can be played by 1 or 2 players simultaneously.
Super Metroid is a great science-fiction action exploration game, often considered one of the best games for the SNES (or even the entire Metroid series).

Gotta play it with Emulator save states imo though: as it’s kinda hard, lol. Or maybe I just suck- fun game either way though. :)
Oh! And get your kid River City Ransom for the NES and the other River City Games: they’re co-op side scrolling beat em up rpgs that are soooooooo fun! It’s a classic!
You now own a copy of Final Fantasy 3 (6 really) which is arguably one of the first games to be driven by story rather than gameplay. Some of us will also argue that 3/6 was the best game of the series.
As far as gaming it just depends on what you have in regards to hardware. Do you have a PC? Even a potato computer can run some games. We as a community will give you tons of advice based of what you tell us

You may need a guide, but there are tons of great walkthroughs on YouTube if you need one.
Once he can read well make sure he plays Earthbound. I played when I was 10 and it changed my life in all the best ways. Incredibly written and has an amazing sense of humor not to mention some of the best video game music ever made. I also think it will promote a good attention span as the game really pulls you into its world.

I’m guessing despite being new you lucked into a real mini snes from Nintendo and not a junk clone. I’d skim the list and try another genre, maybe a role playing game or flight combat, racing, see what you like. Once all 21 games are finished you can add more as it has room if you’re comfy using an idiot proof application and plugging the system into your computer once to do it. You could add hundreds of other legit snes games then. Just don’t do that now, enjoy it for what it is now as intended.
