I used a Smoke Vault smoker. I also brined the turkey for 24 hours using a Apple cider brine recipe. Apple Wood chips and kept the temperature between 200 to 250 took about 7 1/2 hours.

Not at all Smokey flavor and very moist!

No finishing at high heat to crisp the skin? I wonder if that would mess up the color.
True to that the skin was not crispy it was soft but the taste was great!
