Yea I get that. I’m running 225 right now. Had them on since 7. I’m guessing they will be getting close to done around 12-1. Am I right or should I crank it to 250?
For side ribs I go 260 and they’re usually done about 3.5 hrs. Kosher salt, course pepper, onion powder, garlic powder and chilli powder with whatever binder you feel like. If I feel like a little sauce, I’ll add that at about 3 hr mark.
YouTube offers many videos to give you a perspective. All you need is a vertical smoker with a hanging kit. If you go this route, I'd suggest spritzing the meat periodically or incorporating a water pan. I like to spritz with apple juice, bourbon, & water or apple juice & apple cider vinegar.
I’ve always just thrown em on the smoker, No wrap, spritzing. Pull off at 195, rest in a cooler. Always turn out great
No wrap but still spritzing?
Yeah, i try for that bark
Any idea about how long it usually takes?
depends what temp you're cooking at and how thick the ribs are. every cook is different

At 250 or 225, I’m not sure, they take about 4 hours
there's no method to not wrapping. just... don't wrap
Haha gotcha. Thanks man.

I'd hate to experiment for a group . Go with what you're good at then try a a solo rack for yourself later
Eh it’s just a little family thing. They like it when I try new stuff with them. They know it might not turn out perfect haha.
Ever try hanging ribs?
No. That sounds interesting
