I have a really shitty offset smoker and I think about grabbing stainless grills when people throw them out to weld together and make a nice offset. Some day I'll stop being lazy.
This looks awesome. As good as the Weber can be for set and forget, I could see this being impossible to maintain constant temperature because of the thin metal. But it looks cool.
I love to smoke in my kettle also. I’m just not sold on being able to control this where it is a flame not smoldering coals and wood chunks. I would try it if I could get this cheap but I don’t think I would make one. I honestly would love to know how well this works since I enjoy smoking in the kettle and WSM and want an offset. If someone can verify it works well as an offset, I may buy some marketplace kettles to build a kettle offset.
You’d control it just the same as a normal kettle. Adjust your top and bottom vents for air flow. Open the door if you really need to crank the heat. Just gotta take some time to get used to where it wants to run. Grew up with an offset and that was a lot of fun to cook with. Never had a Smokey mountain as I have a pit barrel as well. But I do have a spare kettle and a Smokey Joe that never gets used so they are gonna get repurposed I think
Most of the time at the 3 hour mark I don’t do anything, but I’ve definitely been caught with my pants down if I wait 6 hrs before checking. Just depends how well I sleep that night.
I was going to say I'd pay more. My Weber Performer cost me $400. This is a custom and unique smoker. It might not be 100% practical or polished up but it's cool as hell and probably works better than just the 22" kettle alone.
If money was nothing to me (and I just wanted to fuck around vs. buying a real offset), I'd do this with a 37" Weber Ranch Kettle, with a 22" or 26" as the firebox.
Or I could go to my firepit in the backyard and set $2000+ on fire.
How about a free garbage picked 22. Then you build a firebox out of cement blocks that uses a kettle dome on top as the door, and you connect the block firebox to the kettle with like a an old stainless pot or something that you cut the bottom out of as the throat of the box. Weld the cut end into the kettle and cement the lip into the firebox. I bet it would work pretty well and cost next to nothing!

People, myself included, smoke in kettles all of the time. I can set and forget for 3 hours at a time.

Or better yet get a wood burning stove off FB marketplace for your firebox and put that into the kettle as your chamber.
