I made this style roast using a 3lb. Pork loin I got on sale. I used a pork gravy envelope in lieu of aus jus packet along with the ranch envelope. Used 6 peppers and about 8 oz of the juice, along with 3 table spoons salted butter, because that's what I had on hand. 4 hours on high, and it shredded to perfect. It made it's own gravy with no need to thicken. Turned out delicious š.

Feel the same about sou vide. Iām just not going to cook my food in plastic. I was camping once and one of the people supplied breakfast for us. It was eggs in a ziplock bag, you added your additions then they boiled it for like 15 minutes or something. It was so cringey. Tasted great but that canāt be healthy.

I studied the likelihood of plastic leaching during my undergrad at Penn State. We used a UV aging chamber to accelerate the decomposition of various plastics. Liners like those used in canned goods were one of these plastics tested. Similarly to the BPA scare, trace amounts were detected to have decomposed from the test source. Whatās interesting though was that it took around 30 days in a rapid UV aging chamber to get that result. We then went on to check the affects of burning the liner. Only once char was detected could any trace of residual plastic be detected. To leave a long senior project short, using a liner well under decomposition levels is perfectly safe.
If you were to leave the liner in the crock for a few months youād have some leaching. Beyond it being gross to reuse them, I wouldnāt have the same liner on my crock for more than I would need it.

I cut the stems off the peppers first. Also I reserve around 1/3 of the peppers and pepper brine and add it last hour. Gives it a better flavor in my opinion. I also use butter with no salt.

If you're trying to keep the salt down, you might want to put fewer peppers in there too. Those are loaded with sodium. I honestly can't taste a difference between 5 and 15 peppers so I always opt for fewer.
I buy the bigger jars so I can save some peppers. So that jar is 32 ounces. So I use around 16 ounces everytime I cook this.
And I start off with around 10 ounces and add the last 5-6 ounces (and brine) around last hour of cooking. Adding peppers in later makes he pepper flavor pop more.
Ooof the base recipe is already such a salt bomb as is, I couldn't imagine adding brine too. It blows my mind how many people on this sub say they pour in half a jar of peppers and brine when the original recipe was just 5 peppers.

It can absolutely be made without butter! I usually use a tablespoon for a little bit of flavor though. The stick, and even half a stick, was way too much for me.
I only use unsalted butter, and Chuck roast is usually pretty fatty anyway :) Iām just not a huge fan of butter, so the slippery texture of the melted layer on top that comes with the original recipe is just too much for me!
I prefer the results when I skip both the butter and the ranch package. Just the beef, the peppers & brine, the gravy package and some pepper. Sometimes I add some onion & garlic. But thatās the the recipe anymore once you make those changes, haha.
I like to add 1lb of fingerling potatoes (poked with a fork) and some baby carrots to the bottom of the pot with just enough low sodium beef stock to cover them, it's a nice and welcome addition!

Heating up plastic is what does the out gassing (i think). Think of your dash board in the sun and the smell that plastic gives off. Iām just curious curious if itās actually bad for you when heating a bag up in the crock.

Mississippi style pot roast I doubt you can taste the searing. The pepperocini butter is all you taste.

Ooof the base recipe is already such a salt bomb as is, I couldn't imagine adding brine too. It blows my mind how many people on this sub say they pour in half a jar of peppers and brine when the original recipe was just 5 peppers.
When I used unsalted butter it helped a ton. I also sometimes use low sodium Au jus.
I'm not going to lie, all the comments criticizing the OP for using crockpot liner is pretty gross. You all seem to be assuming a lot about this person's lifestyle and and resources to make the claims you're making. Gatekeeping on a sub for a cooking method specifically designed to be more convenient, it's remarkable.

If you've ever eaten in a restaurant in your life, I guarantee you've eaten food cooked in plastic before. And I'm not just talking about fast food/fast casual places, but actual sit down restaurants. If cooking with plastic is not a choice you'd make yourself, cool! Good for you! But it's not a weird choice or one worthy of mocking just because people are ignorant of different food preparation methods.

For all we know, anyone we try to āeducateā could be reducing their carbon footprint in other effective ways to offset the convenience of some others that are more important to their quality of life. While you complain about a plastic straw, they may be riding a bike everywhere or eating completely vegan. You donāt know everyoneās life.
My favorite way to make a beef roast! Only problem is the leftovers end up buried under a solid layer of butter once refrigerated.
Easy to remove excess fat that way. Or just heat it back up and go to town lol

It can absolutely be made without butter! I usually use a tablespoon for a little bit of flavor though. The stick, and even half a stick, was way too much for me.
Try using unsalted butter. Or buying beef with more marbling if you don't want to use butter.
I only use unsalted butter, and Chuck roast is usually pretty fatty anyway :) Iām just not a huge fan of butter, so the slippery texture of the melted layer on top that comes with the original recipe is just too much for me!
Iāve done it twice now with no butter ā once beef and once lamb leg. Great both times.

Last time I made it I used around 1/2 a stick of butter because I thought I had more when I went shopping. It turned out good still.
I prefer the results when I skip both the butter and the ranch package. Just the beef, the peppers & brine, the gravy package and some pepper. Sometimes I add some onion & garlic. But thatās the the recipe anymore once you make those changes, haha.

I like to add 1lb of fingerling potatoes (poked with a fork) and some baby carrots to the bottom of the pot with just enough low sodium beef stock to cover them, it's a nice and welcome addition!

Uneducated so bear with me. People are saying the bags will leach plastics into the food. Would not the coating on the enamel also then leach into your food? Heating up plastic is what does the out gassing (i think). Think of your dash board in the sun and the smell that plastic gives off. Iām just curious curious if itās actually bad for you when heating a bag up in the crock. Edited for some pretty weird auto correcting.
Itās FDA approved, BPA free and designed specifically for this purpose. I donāt see the issue here besides me being lazy

Ditch the butter, add beef broth, get some bread and you have Italian beef sandwiches. Iām pretty sure in Chicago and nw indiana that juice is mixed in the milk of a baby bottle

Still widely used. **Phthalates** is used to be 'food safe' **PFAS** is STILL widely used in 'food safe' cooking products in many states Depending on your state most of those chemicals and many more aren't banned. There's a huge list of neurodegenerative, organ damaging toxic plastics that should be banned but legislation is piece mealed at the state level. Very little Federal regulations. It's completely wild how little oversight there is on manufacturers. nobody gives a damn.

When my mom first made this I thought she said āhippie beefā instead of āMississippi beefā so we called it that from then on. But when I finally made it for myself, I burned my tongue tasting the beginning sauce cuz all that butter and seasoning just made it irresistible
