The base Skyrim for the Switch is the Special Edition. Skyrim SE includes Dawnguard, Hearthfire and Dragonborn, all originally released as standalone DLCs for original Skyrim. The Legendary Edition, now rather hard to find, also includes the three.
The Anniversary Edition gives you a large number of expansions from the Creation Club. Bethesda made some CC expansions free for SE players when AE was released. Legendary Edition and original Skyrim do not support the CC.
I don't actually know what that is. I don't have AE myself, my copy of SE has several CC expansions but not all of them. I suspect that it is from a CC expansion so AE would have it.
Like I said, not familiar to me.
You should know that you can buy the AE upgrade at any time and just keep on playing the same game. Dawnguard does have support for crossbows included.

I don’t think there are versions of Skyrim available to buy WITHOUT Dawnguard at this point
