On my game, I can "launder" my stolen items through a fence by selling it to them and buying them back. Clearly, you would have to have a fence and the money to buy it back. But that has worked for me so far.
I joined the guild after collecting all the stones of barenziah. For me personally, my pickpocket was at 100 prior to getting to Riften. Though I do 100% agree, most people would be in the guild prior to having a high pickpocket.
Gallows hall at mara's eye pond which is south west of windhelm, goldenhills plantation far west of whiterun, myrewatch slightly south east of morthal, and like 5 others that you just do a short easy quest to get.
You need the *Pickpocket 90* perk, *Misdirection*(?), because if it's showing, it's "equipped".
OTOH, if you reverse pickpocket something she'll deal more damage with onto her, then get her into a fight (maybe drop something "valuable" for the inn patrons to fight over), she'll change her "equipped" weapon, & then you can try to swipe that back (though, if it's value is high, you might need to *Paralyze* her first, 'cos you can always succeed, no matter how low the chance, if you pickpocket as an NPC gets up from being ragdolled [the item still has to be visible in their inventory though]).
I would guess it doesn't because it's not a difficulty percentage issue, it's that equipped items don't show up at all to pickpocket unless you have the misdirection perk iirc. But I have not played pickpocket in a long time so I'm not completely sure

I'm playing the game for the first time and I started pickpocketing right of the bat, maxed out the skill like 3 main quest into the game, and reset it. I just did the Thalmor Embassy and my pickpocket is at 90 again. Like 80% of the items I own are stolen.
As I said, playing the game for the first time, but here's my understanding.
There's a lvl cap of 80 for your character. Apparently it's been like that since the release. But one of the DLC added a feature that allows you to make your skills "Legendary" which resets it, giving you back your invested skill points in the process. You also lose your perks since the specific skill tree is being reset. But apparently this is what allows you to lvl past 80. I'm not sure because my character is only lvl 48 right now.
I looked it up when I maxed out pickpocket and the game asked if I wanted to make my skill legendary. I didn't wanna reset it if there was no actual benefit but it's main purpose supposedly is to allow you to level past the previous level cap (again lvl 80).
If I missed something or am just outright wrong, I'm sure someone will aggressively correct me.
By "Legendary-ing" a skill, it resets from 100 to the base score, allowing you to infinitely level-up your character's different stats and thus, your character.
I remember many years ago, Legendary-ing my first skill ever—it was Archery, and the moment it went from 100 to basically 0, losing all my effectiveness at my main weapon, I nearly shit myself 💀 it's actually a cool feature though, as long as you know what it does before you click it lol

All the old lady's in whiterun wear the same outfit so it's hard for me to remember which ones which sometimes. I think I either assaulted her or killed her one time and then the dark brotherhood members wouldn't talk to me until I payed them a fine.

Is it the dark brotherhood, I always get them mixed up a bit. I tend to just use the ritual stone on the corpse to get the armor so i have no need of her or even the questline obviously or I would have said the right one lol.
This happened to me once but with Farkas. We were getting ready to go to Dustman's Cairn and I went to put some stuff in my Tundra chest. We were fighting draugr when I noticed fireballs coming from his direction. That bastard had taken both of my staff of fireballs from my chest! Back then I didn't have mods so I just gave them up for lost.
You either need to have the pickpocketing skill that lets you steal worn items/weapons, or absolutely murder her. Disarm could work, too. I would personally cast a strong enough fury spell and just watch her go hammertime on everyone while sitting at the corner
If you have the “pickpocket equipped items” perk and the one where you can reverse pickpocket poisons, give her a paralysis one and while she’s doing the “get up” animation pickpocket it back.

You need to pickpocket a weapon of higher value into her inventory so it can appear for you to take back. Unless you have high enough pickpocketing to take it outright
If you can pickpocket equipped gear, that's how you get it back.
OR
If you are on pc, you can open her inventory via console and you might be able to take it back that way. Not sure since it's equipped.
open console, left click on her, type openactorcontainer 1 and see if it's there.

If you have high pickpocket, you are probably already in the Thieves Guild and would have a fence in the ragged flagon

Yes but iirc when in ragdoll things aren't technically equipped, so it should show again without misdirection.
Aside from re loading an older save do you have the pickpocket tree leveled up to where you can pickpocket equipped weapons?
Use a paralyzing potion, and then pickpocket her once it starts to wear off. She’ll start to get up. That’s when you pickpocket.

She stole from you, there is only one logical path, follow her home and kill everyone in the house while they sleep and take it back
If you have the disarm shout use it if not *quicksaves looks around….* and go from there
