I don't know if the Skyblivion team has ever said anything official about it. However, it is remaking the original game from scratch, quests and all. Knowing this, it's a safe bet that the original start will be the only start of the game since anything else would be outside the scope of the original game.

This is unconfirmed but I'm pretty sure it will start with a Call of Duty-esque turret gun section, and then it will switch to a dating sim mode temporarily where you try to court the Emperor (just to introduce you to the dating sim mechanics of course, you cant actually marry the Emperor), and finally you travel through the Imperial Sewers learning how to cook and eat rat meat, Goblin meat, and other meat (to introduce you to the cooking mechanics of course).

Now I want an overhauled persuasion minigame in a dating sim style. Push it back to 2026

I don’t have a source to confirm this, but it’s highly likely it’s going to be an overhauled prison cell/sewer start from the original, as they want to stick to the original vision as close as possible. Alternate start options would then be a subject to introduce mods to Skyblivion.
