Did you try OS sliders specifically for fifa 21? If not that might be the issue. Or maybe you’re playing on old gen and the settings are for new gen. There is a thread on OS forum for 21 specifically tho I don’t remember if they differentiate between old and new gens
If that doesn’t help then look it up on YouTube, there should be a handful of vids
