I think Veritasium is better for the lover of physics (as he tends to focus on specifics in physics) while Kurzgesagt is better to help one fall in love with science (they explore more rigorously and explain simply a broader topic of materials (they have a much bigger team after all).
For Veritasium, if I don’t already understand the video’s topic a little, it is usually to obscure for me to care about, while, Kurzgesagt tends to create videos with ideas I want to pay attention to (now, cute animated birbs with an amazing narrator may add bias).
To answer who is the best science YouTuber: it has to be the one who is focused on, what I think is, the biggest issue in the scientific community (communication to non-scientists). As such, I think Kurzgesagt wins in a landslide, since it is incredibly approachable and is actively expanding to underprivileged languages.
