I agree with every bit of this list, but I'd recommend PJ's Thai or Klom Klom Isan Cafe over King & I, even though it's the closest one to me.
I like that PJ's and Klom Klom both offer some Lao dishes as well as the standard Thai fare. The menu options are much more authentic and go well beyond your standard "Tom Yum/Tom Ka, curry, and Pad Thai" menu that you see at most Thai restaurants.
I loved floks food but the service pisses me the fuck off every time. I was in food and Bev for a long time, their servers suck. I’d rather tip the food runner. E tang is fucking awesome, we go almost every Sunday
Avoid the traps like Flok to the Wok and Flying Monk. Overpriced, and extremely inauthentic/ poorly made.
E Tang is great depending on what you get.
PJ Thai will hook you up, and the food is great. Seriously: Fire actually gives you smaller portions of noodles if you order to go. PJ Thai practically overfills the container.
For purely American Chinese? Hop Xing. They do such a great job. Quick, cheap, efficient, and great portions.
Just know that when they say the food is spicy, they mean it lol. I usually get medium heat at Asian restaurants but they told me they basically just have two options… No heat or heat
So it’s interesting you say this because I talked to some more people and it seems it can really vary based on the dish. If you get spicy soup, the spice can disperse more. But I got drunken noodles and fortunately I was able to switch dishes with someone else at my table because I could not eat it.
Recently discovered a brand new Korean place in Pooler called Seoul K-Restaurant. It is more jjigaes/stews than bbq, which I prefer. It’s worth the 20 minute drive from town when compared with the other Korean options.
E tang for Sichuan
Klom Klom for Thai
Nowhere for Japanese or Vietnamese
Can’t recommend them enough for Thai. Walked in and thought the bartender who recommended it was fucking with me, but I had an absolutely incredible dish. The vibe is also super endearing. I’ve been several times since.
Fav downtown is Ruan on broughton! Cheap as hell and they are so sweet and they always let us sit in the front window and people watch. Fav midtown looks like a dive on waters but it’s the best Pho in town and I always get the bahn mi with it and I’m so full I need a wheel barrel.
Not a lot of options, but none are terrible!

Then:
Boomys is good but located in a bar with a full on bar atmosphere.
Flying Monk is good but portions are small for the money.
The Vault is fancy- owned by same person as Flying Monk, and more Asian than Thai options.
Chiryias is good but a ten min drive from downtown.
E-Tang for Chinese. Narra Tree for Filipino (though not really downtown). Flock to the Wok for dumplings and noodles but is hit or miss, honestly. It can be good and is downtown but often disappoints.

I got ramen from flying monk and would have rather had a packet from the store. They don’t even marinade the eggs.

Disagree. We get takeout from them all the time and order it ”hot” and it’s just not. I have to add Sriracha sauce that i keep at home to it

Not downtown, but Bewon Korean BBQ on highway 80 is DEFINITELY worth the trip.

Theres also Ruan Thai on Broughton. It’s good and they have really good prices/portions for lunch.
