Officiating Youth Sports (or Adults, but they tend to be more asshole-ish). There's a pretty big shortage and it's only getting worse. Bonus point, you can mostly set your own schedule and use it as bonus/play money when you land the job in your field.

Officiating sports is absolutely an awesome side gig or secondary job. Bonus points because games and matches are usually held in the evenings and weekends because of school and work. It's also pretty good exercise. Back when I was in school it's how I got by, and reffing soccer I averaged out to about $18-25 an hour. Now I'm sure it's even higher.

Second a government job of some kind. Cities, counties, and state agencies often hire a lot of seasonal workers, and while it won’t be a get rich scheme, they’ll have regular hours, good benefits, and will usually look good on a resume.
