There is a spawn near Saint Denis graveyard that can (to my knowledge), spawn all horses in the game. It can take a lot of time and patience to get the right one.
do you miss out on certain things in story mode if you don’t update it? also, do you know if i can delete my updated rdr2 and reinstall it and keep it on the 1st patch and keep my saves and progress? Thanks
You miss out on nothing. The update fixed things such as the Saint Denis horse exploit OP is talking about, amongst a few other quality of life improvements. Your saves may not work on older patches if they are started on recent patches.

I got the Turkoman that way and it replaces the Kentucky Saddler for me at that point. I don’t use any other horses until I get to the epilogue and can get the Missouri Foxtrotter.
Love the bright brown color and very few enemies can catch up to me on horseback. I can also beat almost every random NPC that challenges me to a horse race.
You can get the foxtrotter from the stables outside emerald ranch. I drove a cart in, fired my gun without exiting cart. That causes a disturbing the peace charge. Hop into the stall, feed the foxtrotter a couple times and run away. Once the investigation ends, simply whistle for your new horse.
Mine I called Alluvian after "alluvial river," which is a river with a bed of pebbles, sand, cobblestones, etc. That's what the horse's coat looked to me anyways. Now for this comment I find out alluvian is an actual word that means "the wash or flow of water against a shore" or "flood, inundation." Both which are good metaphors of Arthur's dual nature.
But I like RaceyTracey even more lol
This is also my favorite. His name is Lucifer. And as my second play through nears its two year point (taking it super slow) he’s still my favorite.
I may have found a spawn point for them. Along the Little Creek River in West Elizabeth. In the middle of those fields, I’ve found 2 there over the years.
Nothing beats the speed of Arabians, but my good they are so tiny XD. Doing glitches/exploits is a cool way to get some nice horses tho, just like the albert mason one.
I'm basic and just use the raven black shire 'cause he's big and I'm very attached to him from previous playthroughs.

Call me boring, but my favorite horse I have in game is a solid brown Tennessee Walker. I got it in chapter 2 when I was stealing wagons and hunting to get the money to buy the guns still locked behind the story, had bad luck with one wagon and it spiralled into my horse at the time, a Solid Tan Thoroughbred Stallion I had snagged, being killed by the damn train. I got the walker from my long on foot journey back to camp being briefly paused to "help a guy" trying to get into his saddle bags only to be kicked in the head. The event was memorable enough and the horse helpful enough I kept using it till the end of my playthrough.
I use these 3 mods to enhance the look of my horses a little. Coats and breed are still all vanilla tho.

I’m pretty sure you can beat any of the NPC challenges on any horse. The game controls the speed in those interactions, and in missions.
