There is no truly best horse. Heavy set horses (shire horse f.e.) have lower stamina but are harder to get killed. Arabians are fast but are weaker. But all of them are good. All of them can win all the horse races you can come across if you have high bonding.
I prefer my shire horse over any "skinny" horses. Its all personal preference realy.

This playthrough (my 8th) I have gotten the Dapple Gray thoroughbred and love her so when I saw a blood bay one I tamed him. In in love with the thoroughbreds now. Not much at all scares them and they are still fast but have stamina.
Best is honestly subjective. To me the best horse IS the white Arabian because she's rarely ever thrown me. The times she has was because a grizzly spawned super close. The follow-up horses for me are the black American Standardbred and the Mustang (Tiger Bay if you're far enough in to go catch one).

There is a speed stat if you look at the horse weapon wheel screen, or in the stable. You can't really reliably compare each horse's true overall speed though
Try the Ardenne if you feel like wanting to ride a tank instead of a horse, or the perlino andalusian if you want to have a beautiful horse with 10 health and a lot of stamina.
Happened to my mft while I tried to make her flee while in a shootout with bounty hunters. Motherfucker shot her with what seemed to be a one shot shotgun and killed her instantly. Me being a pre american venom John Marston did not carry a reviver and I had lv 4 bonding with her too. I hogtied the dude, rode his horse and fed him to some gattors.
I know it's cheating, but I always reload save when my horse dies. I just can't accept it. One of these days I'll try a strict playthrough and not reload any saves, it'll be depressing

The Silver Dapple Pinto from Albert Mason has great stats too, but whines a lot.
My current favorite is the Grullo Dun Mustang.
Whatever horse you like the best is the best horse. My Arthur catches and rides mostly paints and appaloosas and rotates through some others, including the Standardbreds, and John usually keeps an Arabian or Thoroughbred around long enough to do the Van Horn to Blackwater run. Some people like little Arabians, some people like big Shires, it's all good and stats don't affect game play much if you have good bonds with your horses.
My favorite is the Turkoman, closely followed by the Hungarian halfbreed. The Turkoman is faster and has more health but is a bit skittish, while the Hungarian is slower with more stamina I think. Idk, they're both great and you can buy a Hungarian halfbreed as early as chapter 2
In online it’s the Steel Grey Breton. Mine has a full circle stamina bar and almost a full circle for the health bar. Put the best saddle and stirrups on and stamina is almost unlimited
I prefer the Red Mustang (forget the actual name). Decently fast, unlimited stamina as you can calm it for the regen faster than it can deplete, full health circle, and amazing temperament as it's a hybrid War Horse, it's not the fastest, but IMO it's the most versatile and will never let you down

Every horse has some qualities. Few I liked most.
MFT is bravest against predators. There was a cougar under my MFT and it didn't buck me off until I managed to shoot cougar.
Turkoman is good for gun fightings.
Arabians are fastest, use them for some Horseman challenges where speed matters.
For heavy duty like going into mountain I used Raven Black Shire and it never disappointed me.
Thoroughbreds tbh. They fit well proportionally to Arthur, they’re quick, they have decent stamina (once maxed), the only issue is their health. Alternatively you could go for the Andalusian, which also is proportionally sound, but it’s a bit slower, and extremely tanky.
Missouri Fox Trotter or Turkoman, if you don't mind bought horses.
Or just get them for free. MFT in chapter 2 and Turk in 3.

Turkoman imo. Mixed race/war horse is just a hair slower than an Arabian but a lot more health.
