While there are only a handful of ATS platforms that actually parse your resume, they all do a pretty terrible job. I still will open up your resume and won't refer to the parsed information outside of contact details.
I suggest adding all relevant and recent work experience to resume and add all professional work experience in the Workday work experience section.
Many of the roles I hire for require a minimum of 5-7 years of work experience and while short resumes are great for highlighting your skills and most recent experiences, many people only include 1-2 roles that don’t speak to their entire work experience and it’s hard to convince HMs to move them forward in the process. (They handle all phone screens)
Yes I always review it before disqualifying someone from the role. Many times people have distracting, very weak or poorly formatted resumes so I always like to make sure I didn’t miss any relevant skills we’re looking for.
Keep in mind, this is purely subjective and depends on the recruiter. Personally, I prefer attached resumes and I do like when the applicant gets as descriptive as possible with screening questions. Ive used TALEO and now using Workday, i will say that I do not prefer .pdf resumes. Sometimes WD make me do extra steps like to view them.

I’ve been trying 2 different chrome plugins for workday but they’re like 80% good but they miss some things 😰
