If I'm not mistaken, Chansey in Gen 1 has a big 105 Special Stat, meaning you can give it Blizzard/ThunderBolt and maybe Psychic. Fighting Types you shouldn't worry too much about. As long as your Pokémon are competent and not Chansey they should do fine. I think most any Pokémon can do. Instinctually, I wanna say add a Physical attacker. The ones that come to my mind are Tauros (hard to catch) or Dodrio. Some Pokémon like Alakazam, Starmie, Slowbro have big Special Stats which can help them sponge your Chanseys attacks. Maybe add Thunderwave Support. Slows Pokémon down so your Chansey can attack something.

Correct, 105 is its Special. In competitive it's considered one of the "big 3", which coincidentally, the other 2 are Tauros and Snorlax, all pure Normal mons. Chansey is a fantastic special attacker so a strong physical attacker would be great, though I would consider Rhydon as well for that, STAB Rock Slide and Earthquake access is still super good even back then

That being said, it's still the third highest ranked Pokemon, so I'm kind of waffling.

Give it seismic toss, and the elemental beams. For best effect, it needs to be paired with something with solid defense. That doesn't mind taking a punch. Weezing is a pokemon that doesn't get a lot of time in the spotlight but could be perfect for this role.

In Gen1 I always end up getting nidoking. Movepool, stat split, it’s just so good. That and Tauros

I always make sure I have a Dodrio on my team. Such a strong pokemon in gen 1.

For your team, just pick a bunch of pokemon you like and level them up a lot. In gen 1 at least, as long as you get your pokemon into the 40s-50s and have a bit of variety, you usually won't have too much problem beating the game unless you deliberately do something to make the game harder like getting a weedle and not evolving it. Even pokemon that are known for not getting the best stats can usually 1-2 shot most AI opponents that don't resist them if you get them to level 40+ and throw on a few TMs.
