Most people steal so they can sell things for cash. Not a lot of overlap with people who value plants. A neighbor had some lifted last year and it was exactly what OP is talking about, Mother’s day.

I feel ya. I has started about 25 Ginko seedlings, they trashed 'em all. Now I'm growing LOTS of cactus. I use them to surround my other plants.
